Ready-to-make snacks are often a great option when it’s raining and hunger strikes. I frequently stock up on ingredients for my favorite snacks so I have something quick to whip up when I'm hungry.




Hello fellow foodies! Today, I’m going to show you how to make one of my favorite snacks: fried spring rolls (lumpia). They are incredibly easy to prepare and can be made by anyone, anytime the craving hits.

Spring rolls are a beloved snack; not only are they simple to make, but there are also so many delicious variations you simply can't miss. This time, I’m making a version filled with corn and mayonnaise. I came across this recipe on social media a while back. I was so intrigued that I immediately bought some corn and spring roll wrappers so I could try it out right away.

Ingredients

1 ear of corn
Spring roll wrappers (as needed)
3 tablespoons mayonnaise
2 tablespoons chili sauce
¼ teaspoon salt
¼ teaspoon mushroom bouillon powder




Preparation Steps


Cut the corn kernels off the cob and boil them in water until cooked through.

Once cooked, drain the corn and let it cool down. Then, add the chili sauce and mayonnaise. Mix everything together until well combined, making sure to add the salt and mushroom bouillon powder.

Once the filling is thoroughly mixed, spoon it onto the spring roll wrappers. Repeat the process until all the filling is used up; I usually use just one spoonful of filling per roll.

Fry in hot oil until golden brown. Use low heat to prevent them from burning too quickly.

And there you have it—fried spring rolls with a corn and mayo filling are ready to serve. Be sure to serve them while they’re hot; don't wait for them to cool down, or the wrappers will lose their crispiness. I absolutely love the combination of corn and mayonnaise; it is truly a delicious flavor pairing.

It offers a savory-sweet taste from the corn with a hint of spiciness, featuring a texture that is crispy on the outside yet soft on the inside—a perfect mouthfeel. I am convinced this is a wonderful way to prepare corn; it is incredibly tasty, even though the ingredients are simply corn, mayonnaise, and sauce. Yet, the flavor is truly exceptional.
