I have recently returned from my honeymoon, of which I will soon begin to publish travels and delicacies, having been on a cruise ship with excellent food and buffet at all hours on the way back we must necessarily eat lighter after the holiday binges, therefore today I decided to make a kind of basmati rice salad with cherry tomatoes. Something simple and light.
To do it you need:
300 grams of basmati rice
100 grams of cherry tomatoes
30 ml of yoghurt sauce
three tablespoons of olive oil
three of salt
a sprig of rosemary
First, prepare a pot with water and salt and as soon as the water boils, add the rice which will have to cook for about twenty minutes, I recommend stirring often otherwise the rice risks sticking and not detaching from the pot, in the meantime clean the tomatoes under running water and cut them into thin or thick slices to your liking, then once you have drained the rice add them to it and mix vigorously, put everything in a bowl and add the yogurt sauce mixing vigorously there too so that the sauce mix it with the rice, add the oil and the rosemary leaves and then put it in the fridge for about half an hour, serve cold and it is very good and light.
