Hello, my lovely friends! I wasn't sure what to have for lunch today. Usually I eat noodles, but I'm getting bored of them. Today, let's try something delicious and spicy. But before I cook, I always think of my daughter because I don't want to cook the same thing twice. So I usually choose dishes that aren't too spicy. However, today my daughter wanted to try something really flavorful and spicy. I came up with an idea because I had cucumbers in the refrigerator. Initially, I wanted to make papaya salad, but papaya is quite hard to find and expensive here. So buying cucumbers to keep in the fridge is a good idea; I can make something with them, and it tastes just as good. I only added one chili pepper; I didn't want to put in too many because my daughter wanted to try it.
My method is simple and not complicated at all, even though I don't have all the ingredients like I did in Thailand. I only have garlic, fresh chilies, cooked fermented fish sauce, palm sugar, tomatoes, cucumbers, fish sauce, and lime. That's all I need to make delicious cucumber salad. Normally, I'd add long beans or olives, but since I don't have those, this is the best option. I also add boiled rice noodles, then mix in some fried garlic, and I have fragrant and delicious noodles to eat with the cucumber salad.
After that, I had some delicious papaya salad to eat. I seasoned it to my liking; I prefer it not too sour. You can mix the papaya salad dressing with the blanched rice noodles, and when you eat it, you'll get a different flavor. It's hard to explain better than trying it yourself.
