Baked Stuffed Squash with Apples and Walnuts

Hello foodies,

Here's a recipe perfect for a Sunday!
It is nourishing, it is sweet and it is healthy! What a combo! Plus, it's easy to make so win win baby!

The ingredients are whole foods, no need for added sugars or semi prepared foods.

I love this type of food mostly in winter because it is a comfort food for most people. But I enjoy it no matter the season because I love Butternut Squash.

I always get confused about the terminology here. Is it butternut squash? it is pumpkin? They are so alike, at least here in Romania the term pumpkin is widely used, for butternut squash too. We just have Pumpkin and that's it. Nobody would say there's a difference between Squash and Pumpkin lol.

Anyway, here's the recipe.

Ingredients:

  • 1 medium squash
  • 4 apples
  • ½ cup walnuts
  • Pumpkin pie spices (nutmeg, ginger, cinnamon)
  • Maple syrup
  • 2Tbsp coconut oil
  • ¼ cup cranberries

Instructions

  • Preheat the oven at 180°C.
  • Cut the squash in 2 halves
  • Remove the seeds
  • Cut much deeper to have a gaura

  • Oil the squash halves with the coconut oil and sprinkle it with spices and put them in the oven for 50 minutes or until is completely done.

  • Meanwhile, cut the apples and then put all this ingredients (apples, walnuts, spices, coconut oil) into a pan and sote them until caramelized 10 minutes would be eanough.

  • When the squash is ready , remove it from the oven, add the ingredients from the pan and bake everything together for 10 minutes more.
  • After this, let it cool for 10 minutes and then add the cranberries too.
  • When you cut it into slices, add the maple syrup on top and enjoy!
