Orange Cranberry Sugar-Free Muffins

Hello Hivers!

Seven days of grey and rain had me feeling blue, as the continuous sounds of raindrops and chilly weather forced me to wrap up and snuggle inside.

I decided to enhance my tea intake (which spiked as you can imagine), and since I'm not much of a sweet tooth, I chose to bake some Sugar-free Orange Cranberry Muffins - I'm an absolute sucker for muffins馃構

This recipe is simple, and you might already have these ingredients sitting in your cupboard or refrigerator, so why not give it a try?


Ingredients:

  • 3 cups All-purpose Flour
  • 1/2 cup Dried cranberries
  • 1 tbsp Baking Powder
  • 3/4 tsp Salt
  • 1/2 cup Freshly Squeezed Orange Juice
  • Pulp from the Orange, optional (I love roughage 馃槈)
  • 1/2 cup Butter, softened
  • 2 Eggs, room temperature
  • 1/2 cup Milk, room temperature
  • 1tbsp Vanilla or Almond Extract
  • 1 tbsp Orange Zest
  • Pumpkin Seeds and Chia Seeds for Topping
    (juice of one lemon can also be added)

If you're using sugar: - 1/2 cup Sugar, (mine is sugar-free)

Method & Utensils

  • Muffin Cup Liners, optional
  • Electric Mixer, optional or Fork
  • Muffin tins
  • A Large Bowl

  • Pre heat oven to 400 degrees F
  • If you have paper liners, line muffin cups with liners (approximately 16)
  • In a large bowl, whisk together flour, baking powder and salt, If you are using sugar, please do so now.
  • Add butter and mix with a fork or electric mixer
  • Add eggs, milk, OJ, Pulp, cranberries, vanilla or almond extract, and orange zest.
  • Mix all ingredients well. but do not overbeat.

  • Evenly distribute to all muffin cups (I'm not using a liner, so I coat the muffin tins with butter to avoid sticking.
  • Sprinkle pumpkin seeds and Chia Seeds on top.
  • Bake 15 - 20 minutes

This is great for Breakfast, served with bananas and freshly squeezed orange juice, but it's SO SPECIAL on rainy days, because the aroma gives your home a cozy feel and it's a wholesome treat.
