¡Bienvenidos!
Hello, Sweet Little Bees!
I'm sure you love desserts as much as I do. For a long time I was wrong about the preparation of cakes, because I didn't give much importance to the instructions that the experts in the family gave me and much less the recipes that I looked for on the internet, I usually ended up making a mess that was not at all appetising and wasting ingredients.
There are some very important facts when it comes to making a cake that, if you skip or change them, your result may not be the best. In the following article I leave you some tips that if you like you can consider in your preparations. Welcome!
Always make sure you use very good quality ingredients, make sure they are not out of date and experiment with variety until you have your favourites. When making the recipe I recommend using them at room temperature as this will make them more homogeneous, it is also important to weigh and have a balance between liquids and dry ingredients. Adding 1 kg of flour is not the same as adding 1 kg of margarine.
basically this procedure is very simple and part of this is the fluffiness of your cake, whether it is a light batter (without fat) or a heavy one (with fat), will depend on your recipe, but here are some very specific steps:
- Separate egg yolks and egg whites. Beat the egg whites until stiff and set aside.
- Cream the margarine until it changes its colour to opaque.
- Sieve the flour until the lumps are removed.
- When incorporating the flour you should do it in three equal parts alternating with the milk (liquid).
- Add the egg whites to stiff peaks last using a paddle, do not use the electric mixer.
- The more air you add to the mixture, the better the results. Be careful not to over beat the mixture, as this will activate the gluten in the flour and it will become hard when baking.
- If you use leavening flour it is not necessary to use baking powder.
- Respect the quantities of each recipe.
CANTIDADES PARA TORTA (con materia grasa)
• 1 kg harina de trigo
• 500gr de margarina
• 900 gr azúcar común
• Vainilla al gusto
• 10 huevos (si son pequeños u 8 si son grandes)
• 600 ml leche
QUANTITIES FOR CAKE (with fat)
.- 1 kg wheat flour
- 500 gr margarine
- 900 gr table sugar
- Vanilla to taste
- 10 eggs (if small or 8 if large)
- 600 ml milk
TIPS 3 HORNEAR:
A headache! Yes, here it depends on the oven you have at home, you must be familiar with it and know the temperature very well because if you use too low or too high the result will not be the same. In general, the baking time for cakes does not exceed 60 minutes, but you should bear in mind the following:
- Types of moulds (diameters)
- Type of batter
- Do not open the oven during the first half of baking. Sudden temperature changes will cause your cake not to rise and eventually sink in the centre.
- The baking temperature for a sponge cake is usually between 170ºC and 180ºC.
