Today we'll make a very fluffy sponge cake, and we won't be using wheat flour or baking powder. The main ingredients in this recipe are oat flour and eggs.
I think the key to making it perfect is not overmixing. We'll also need sugar or a similar sweetener, such as monk fruit. The texture of this sweetener is what will give stability when we beat the egg whites. I've used white sugar, of course, because monk fruit is quite expensive, although healthier! In any case, we won't use much sugar.
Overall, it's an easy recipe. If we follow the steps, everything will turn out well, and we'll get a basic fluffy sponge cake, ideal for decorating, filling, or simply enjoying with a delicious hot drink like coffee or hot chocolate.

Creo que la clave en que salga perfecto está en no mezclar sobremanera, también necesitaremos azúcar o un endulzante parecido como, por ejemplo, fruta del monje, la textura de ese endulzante es lo que le va a dar estabilidad al momento de batir las claras, yo por supuesto he usado azúcar blanca porque la fruta del monje es bastante costosa, ¡aunque más saludable! de todas formas no utilizaremos mucho azúcar.
En línea general es una receta fácil, si seguimos el paso a paso saldrá todo bien y obtendremos un bizcocho esponjoso básico, ideal para decorar, rellenar o simplemente acompañarlo con una rica bebida caliente, café, chocolate, etc.

-3 eggs, separated (whites and yolks).
-60 grams of oat flour.
-20 grams of cornstarch.
-1 tablespoon of vegetable oil.
-1 teaspoon of lemon juice.
-1 teaspoon of vanilla extract.
-Round pan: 15 cm in diameter.
First we turn on the oven at 160 degrees Celsius.

Now in a bowl mix the oat flour with the cornstarch, set aside.
Next, in a bowl, we'll add the egg whites along with a teaspoon of lemon juice. We'll start beating at medium-high speed. When the whites start to foam, we'll add the sugar in three parts and continue beating for about 3 minutes, until stiff peaks form in the whites. It's important not to overbeat.
In another container we put the egg yolks, add a tablespoon of vegetable oil, I used extra virgin coconut oil, use whatever you have on hand, and also add a teaspoon of vanilla essence.
We mix until the ingredients are very well combined.
Now we add a small part of the whipped egg whites, and beat until well combined.
Immediately pour this mixture into the whipped egg whites and mix with gentle, enveloping movements; this must be done delicately.
We add the mixture of flour and cornstarch, and sift it.
We mix again with gentle, enveloping movements until everything is well integrated; it is important not to overmix.
We immediately pour this mixture into a greased and floured mold, give it a couple of sharp taps, and run a knife or toothpick through the mixture to ensure there are no air bubbles and that we get a neat cake.
We put it in the oven for approximately 25 minutes, remember to insert the pastry stick, it should come out dry.
When ready, we take it out of the oven and while it is still hot, we run a knife around the edges of the mold to loosen our cake, unmold it and let it cool well at room temperature.
When our cake is cool, it's time to cut a slice and enjoy it! 😍 Super fluffy and delicious!
