It's one of my favourites. It's spaghetti and veggies.
Don't worry, I'll tell you in detail how I made it.
Ingredients
1 pack of spaghetti
Groundnut oil
Green beans
Carrots
2 Tomato paste
Salt
1 blended clove of garlic
Onions
Bell peppers
Seasoning cubes
Two teaspoon of grinded crayfish
Fish
Procedure
- Wash the fish and cut into desired sizes.
- Put in a pan add little water then season it with salt and pepper and spices and boil for a few minutes. When done
- Take out the stock and keep the fish aside
- Pour oil into pan and heat
- Then carefully put the fish in the pan, and fry for about 3-4 minutes on each side.
Then keep it aside.
To the spaghetti:
- Parboil the spaghetti till it's soft and drain it, then set it aside.
- Heat oil in a large pot. Add your diced onions, garlic, and peppers, and gently stir until it's soft.
- Then pour in your tomato paste and stir for a few minutes.
- Add your green beans, carrots, salt and seasoning cubes. After a few minutes add your fish stock and just a little water. (Remember the spaghetti is already parboiled to be soft, so you wouldn't need much water. I'll recommend using only the fish stock except your spaghetti it's still strong).
- Add crayfish ( I don't know about others but I prefer my crayfish to be the last in the pot. It helps to keep it's taste fresh).
- Cover the pot and boil for a few minutes. Not more than 5 minutes.
Serve with fried fish.
