Want to impress your family during this holiday season? Give them a taste of Thailand from this recipe that I am about to share. This recipe has zesty and fresh flavor that will be your new family favorite soup. Though fiery, Seafood Tom Yum Soup is not as spicy as you might think it is. If you would prefer to have fish tom yum soup, check out my other recipe Fish Thai Tom Yum with Anchovies Rice from 10 months ago that I cooked from my apartment with minimum tools. Now that I have the proper tools and a kitchen, I made this recipe from scratch instead buying the paste. So, this is also not one of my college friendly budget recipe as I did before.

Ingredients

Some of the ingredients needed

  1. 1 ounce of shrimp
  2. 1 ounce of clam
  3. a pack of mushroom of your preference (oyster or champignon)
  4. 1 block of tofu
  5. 6 lime leaves
  6. 1 big red chili
  7. 1 teaspoon of sugar
  8. 3-4 tablespoon of lemon juice
  9. 3-4 tablespoon of fish sauce

Processed Ingredients :

  1. coriander
  2. 5 shallots
  3. 1 tbsp of turmeric
  4. 2 tablespoon of cooking oil (preferably coconut)
  5. 3 tablespoon of lime
  6. 1 tbsp turmeric powder
  7. 2 galangal
  8. 1 tbsp roasted chili paste
  9. 3-4 red chili

There are three main steps in this recipe

Making the Paste

  • Add the processed ingredients into the food processor.
  • Let them sit while you are preparing the broth

Making the broth

  • Clean the seafood thoroughly.
  • Add 250ml water and let it boil
  • Half-boil the seafood and drain the water
  • Add 500ml water and let it boil in the new pot
  • Add 6 leaves of the lime and a stalk of lemon grass, make sure to cut it

Cooking the soup

  • Add the mushroom of your preference. Then tofu and the seafood
  • Pour the paste from the food processor into the pot then add the lemon juice and the fish sauce
  • For more seasoning adjustment, add sugar or salt.
  • Stir them well and let them boil for 10 minutes
  • Serve while hot with rice of your preference

Note from Mac

If you want to add more volume into this soup, you can add cabbage as I do. But if you don't that's okay too. The filling of this soup is definitely best with prawns but if you're going with a budget, small shrimps and other cheap seafood are your options. As always, if you want to be extra healthy, you can swap all the ingredients that can be swapped with healthier options.

This is one of my favorite recipe to make. I like to impress my mom with my cooking skills through various of foreign cuisines that I have tried. From this recipe, she told me that my soup needed more sugar though I really prefer something with less sugar added. That is why I ten to say for seasoning adjustment in the steps. Also, if you want it to be extra spicy, you can always increase the volume of the roasted chili paste and the red fresh chili in the mixture.
