Living in sunny, hot and humid Queensland, Australia, the following dessert is the closest thing to a "white christmas" I'll ever get. 😅 Well, unless it hails significantly. 🤔
White Christmas is probably one of the easiest desserts you can make! Easy, simple, but delicious. And it's also one of my favourite things to make around Christmas time. Of course you can make it any time of year, but I always make it around now as a Christmassy treat. 😊🎄🎅
You will need:
- Two blocks of White Chocolate (Only one pictured, I soon rectified my error, haha.)
- 100g of Sultanas
- One 200g bag of Glace Cherries
- One cup of Desiccated Coconut
- Rice Bubbles breakfast cereal!
(Those are rough estimates, I tend to measure "with love" ❤️)
You may or may not also require a Kitchen Cat. A Kitchen Cat who mysteriously appears every time the chocolate comes out. 😅
Anyway!
What you have to do:
Roughly chop most of the glace cherries. Leaving maybe 7 of them, cut in half, for placing on top later.
You can chop them however you like. You can leave them large if you want! But if you chop them, there'll be more sweet goodness in every bite instead of minimal large chunks of goodness. 😉
Throw all of the white chocolate into a microwave-safe bowl and melt your chocolate!
You can also do it over a stovetop, using boiling water to melt the chocolate. But I'm a heathen and just throw everything into the microwave.
Once the chocolate has melted, mix in your chopped up glace cherries and your sultanas.
Then mix in some Rice Bubbles!
This is where I "measure with love." You want enough of the cereal in there so that all the chocolate coats each rice bubble. If you use too much, there won't be enough chocolate to cover it and to "glue" it all together.
Add in some desiccated coconut!
Then scoop the mixture into a tray and press it down.
...Or a quiche dish if you're like me and don't have any small baking trays available at the moment but still want to devour delicious delicacies.
Place the remaining glace cherries on top. 😊
And last of all, sprinkle the lot with more desiccated coconut! You could also be extra fancy and drizzle more melted chocolate over the top.
Now we're going to pop this in the fridge to let the chocolate set, and will eat a decent amount of it for dessert later tonight. 😈 To serve, just chop it all up with a hot knife in random-sized and random-shaped chunks.
I'm using a quiche dish, but really, this concoction is a lot better if you squidge it down into a thinner layer such as on a baking tray. It will taste good either way! But there's something about the smaller, skinnier chunks rather than the fat, thick chunks... it's just more delightful per mouthful. Somehow? (and easier to slice after set!!)
