I've been tremendously snacky lately, to the point I've had to stare myself down and inwardly yell at myself for eating too much chocolate and too many packets of chips. And it most certainly doesn't help that my partner and I decided to buy a deep fryer a couple of months ago... 😬

To curb my insatiable lust for Cadbury's Marble Caramilk and $15 boxes of westernised, deep-fryable Yum Cha, I'm forcing myself to make snacky things from scratch rather than devour from packets... and today's Make Snacky Thing was:

Savoury Muffins

Cheese, Bacon, Onion, Garlic...

Aka: several Foods of the Gods mixed together into one godly conglomeration.

Ingredients!

⭐️Basic Muffin Mix:

  • 2 cups of Self Raising Flour
  • 1 cup of Milk
  • 125grams of Butter, melted
  • 1 Egg

⭐️The Rest:

  • 1 cup of Tasty (Cheddar) Cheese + a little extra
  • 1 heaped teaspoon of Minced Garlic
  • Salt n Pepper to your own preferences
  • Bacon, lots of bacon (250grams for today's recipe)
  • 1 Onion, chopped and diced

I was going to add spinach to it, but honestly, I forgot until just now whilst writing this and now I'm facepalming myself.

The Basic Muffin Mix itself is the most important bit. Have all that, then you can add sugar and vanilla, maybe some fruit, and have some fruity muffins. Or instead you could add salt and pepper and other savoury things and make your own concoction -- it's very versatile!

Cooking Time!

Preheat your oven to 180 degrees Celsius. Which I believe is around 350 Fahrenheit, according to Google.

Combine the Flour, Salt and Pepper into one bowl.

Combine the Milk, Melted Butter, Garlic, and the one, lonely Egg in another bowl. Or, if you're lazy -- like me! -- just combine it all in the measuring glass.

Cook up your Bacon to your own preference. Remove from the frying pan and drain. Cook up the Diced Onion in the leftover bacon grease. Mmmmm. Bacon grease.

Allow the bacon and onion to cool. Chop the bacon to your desired size. I like some bits chunky and some tiny, personally.

Ideally you planned in advance and would have the bacon and onion already cooled and ready, but I'm impulsive and like to wing it. 🤷‍♀

Once the bacon and onion has cooled -- mix the wet ingredients into the dry ingredients, then add the bacon, onion, and cheese.

Spoon into the prepared muffin tin.

Sprinkle extra cheese on top.

Shove into the oven for 20 minutes, salivating the entire time whilst waiting.

Let sit for a bit, then devour!

These are delicious by themselves as a snack, added to a kids lunchbox, or even alongside some spaghetti bolognaise as a makeshift, on-the-spot, bruschetta type thing.

The last time I made these we had them alongside some spaghetti bolognaise, just spooning the sauce and pasta on top of the muffins and shovelling them into our mouths, and it was the best. I highly recommend it. 😁

Until next time,

Thanks for stopping by! 🥓
