[ESP / ING] HUEVOS CON ESPARRAGO Y FARINHEIRA // EGGS WITH ASPARAGUS AND FARINHEIRA
BIENVENIDOS !!
WELCOME !!
Good morning, dear community, today we are going to prepare a delicious breakfast with eggs, asparagus and farinheira😱, now you may wonder what farinheira is, here in Portugal it is a typical sausage from the area that is used as an accompaniment to some dishes, especially stew. Portuguese, it is made with peppers and spices mixed with ground pork, in my case I love mixing it with scrambled eggs and asparagus for a delicious dish, if you can't get this farinheira you can use chorizo of your choice.
| INGREDIENTES | INGREDIENTS |
|---|---|
| 5 und. huevos | 5 units eggs |
| 80 gr. farinheira | 80 gr. farinheira |
| 120 gr. de espárragos | 120 gr. of asparagus |
To fry I use the oil that the farinheira distills or I spray a little olive oil with a spray and I do not use salt because farinheira is a sausage and already contains salt.

We begin by mixing the five eggs as if they were making an omelette.
Chop the farinheira into small pieces and half of the asparagus that we are going to mix with the eggs because the rest of the asparagus is for grilling.
Cut the other part of the asparagus in half and grill it over medium heat. We reserve it for the end of plating and place it on the sides of the scrambled eggs.
In a frying pan over low heat we are going to mix everything, we begin by spreading oil on the pan or as I mentioned at the beginning, you can fry the farinheira and the oil that is distilled can be used to fry, in my case I use olive oil spray, we begin With the asparagus, then add the farinheira and when they are golden, add the eggs and stir..
All that remains is to plate it and we are going to do it by taking a cup that gives it an oval shape and then place the grilled asparagus, on one side, the tips and on the other side the other cut as if it were pierced by arrows.
Bon appetit and enjoy this breakfast that for me is already complete, but if you want to accompany it with some excellent toast
Thank you for taking a little of your time and enjoying my blog.
