​Hoy les comparto una de mis recetas favoritas cuando se me antoja algo crujiente, sabroso y con todo el sabor del mar: Camarones Capeados.
​El secreto de esta receta está en lograr una cubierta súper ligera, doradita y esponjosa que no absorba demasiado aceite. Gracias al toque del agua mineral fría y al aire de las claras batidas, estos camarones quedan simplemente irresistibles. ¡Ideal para un almuerzo de fin de semana acompañado de una buena salsa!

CAMARONES CAPEADOS 😋
Ingredientes:
500 g de camarones grandes, pelados y desvenados
2 huevos
1 taza de harina de trigo
2 cucharadas de fécula de maíz
1 cucharadita de polvo para hornear
1 cucharadita de sal
½ cucharadita de pimienta negra
½ cucharadita de ajo en polvo
½ taza de agua mineral fría o agua muy fría
1 limón
Aceite suficiente para freír
Preparación:

  1. Lava y seca muy bien los camarones con papel absorbente, sazónalos con sal, pimienta, ajo en polvo y unas gotas de limón para que queden bien condimentados.
  2. Separa las claras de las yemas y bate las claras hasta que estén firmes y espumosas, ya que esto ayuda a conseguir un capeado más ligero y esponjoso.
  3. Incorpora las yemas poco a poco a las claras batidas y mezcla suavemente para evitar que la preparación pierda demasiado aire.
  4. Mezcla la harina, la fécula de maíz y el polvo para hornear, agrégalos poco a poco a los huevos junto con el agua mineral fría hasta obtener una mezcla espesa que pueda adherirse bien a los camarones.
  5. Pasa ligeramente cada camarón por un poco de harina antes de sumergirlo en el capeado, ya que esto ayudará a que la mezcla se adhiera mejor durante la fritura.
  6. Calienta abundante aceite a fuego medio-alto y verifica que esté bien caliente antes de comenzar para evitar que los camarones absorban demasiado aceite.
  7. Sumerge cada camarón en el capeado hasta cubrirlo completamente y colócalo cuidadosamente en el aceite caliente sin llenar demasiado la sartén.
  8. Fríe los camarones durante aproximadamente 2 a 3 minutos por cada lado o hasta que estén inflados, crujientes y de un color dorado uniforme.
  9. Retira los camarones del aceite y colócalos sobre una rejilla o papel absorbente para eliminar el exceso de grasa y conservar mejor su textura crujiente.
  10. Sirve inmediatamente acompañados de limón, arroz, ensalada fresca y tu salsa favorita, como mayonesa con chipotle, salsa tártara o salsa picante

Today I’m sharing one of my favorite recipes for when I'm craving something crispy, flavorful, and packed with seafood goodness: Battered Fried Shrimp (Camarones Capeados).
​The secret to this recipe is getting a super light, golden, and fluffy coating that doesn't absorb too much oil. Thanks to a touch of cold sparkling water and the airy whipped egg whites, these shrimp turn out simply irresistible. Perfect for a weekend lunch paired with a great dipping sauce!
​BATTERED FRIED SHRIMP 😋
​Ingredients:
​500 g (1 lb) large shrimp, peeled and deveined
​2 eggs
​1 cup all-purpose flour
​2 tbsp cornstarch
​1 tsp baking powder
​1 tsp salt
​½ tsp black pepper
​½ tsp garlic powder
​½ cup cold sparkling water (or ice-cold water)
​1 lemon or lime
​Oil for frying
​Instructions:
​Prep the shrimp: Wash and dry the shrimp thoroughly with paper towels. Season them with salt, pepper, garlic powder, and a few drops of lemon juice so they get plenty of flavor.
​Whip the egg whites: Separate the egg whites from the yolks. Whip the whites until stiff and foamy; this is the key to achieving a lighter, fluffier batter.
​Add the yolks: Gradually incorporate the egg yolks into the whipped whites, gently folding so the mixture doesn't lose its volume.
​Make the batter: Combine the flour, cornstarch, and baking powder. Slowly fold the dry ingredients into the egg mixture along with the cold sparkling water until you get a thick batter that will coat the shrimp well.
​Dust: Lightly dredge each shrimp in a little bit of plain flour before dipping it into the batter. This helps the coating stick better while frying.
​Heat the oil: Heat plenty of oil over medium-high heat. Make sure it is hot enough before you start so the shrimp don't absorb excess oil.
​Coat and fry: Dip each shrimp into the batter until completely coated, then carefully place it in the hot oil. Do not overcrowd the pan.
​Cook until golden: Fry the shrimp for about 2 to 3 minutes per side, or until they are puffed, crispy, and evenly golden brown.
​Drain: Remove the shrimp from the oil and place them on a wire rack or paper towels to drain excess oil and keep them crispy.
​Serve: Serve immediately with extra lemon/lime wedges, rice, a fresh salad, and your favorite dipping sauce—like chipotle mayo, tartar sauce, or hot sauce!
