Pancakes are the easiest to prepare for breakfast next to oats. When I turned vegan/plant-based, I would make different versions of pancakes depending on my dietary restriction at a certain time. I have a grain-free version, high-protein, and gluten-free. This one is the most basic recipe, an all-season, kid-friendly version.

Here's my very simple recipe!

You will need:
1 cup oat flour (grind some instant oats or whole rolled oats in a blender until it turns into powder)
1 cup whole wheat flour
2 tsp baking powder
flax egg (2 tbsp flax meal mixed with 6 tbsp water)
2 cups soy or almond milk
1 tbsp coco sugar
1/4 tsp salt
dash of cinnamon
sliced bananas, fresh blueberries or any other fruit that you'd like to top it with
peanut butter or maple syrup

Procedure:

Mix all the dry ingredients until fully blended.
Pour the flax egg and the milk.
Mix well using a wire whisk or spatula.
Heat a non-stick pan or grease a regular pan with coconut oil or vegan butter
Pour the batter into the pan.
Flip when it's already bubbly on top.
Serve with sliced fruits, nut butter, and/or maple syrup if desired.
