I am going to my Mom's for the feast of course, in fact I am waiting for my curling iron to warm up to try to make myself presentable. My part of the food is ready and waiting, so getting me ready is the last thing.
I had boiled my eggs to make Deviled Eggs last night and this morning I peeled them. As I was putting another egg on the plate to drain, I noticed one that was already there appeared to be VERY happy !
Little did it know I would soon be scooping out it's brain and making a tasty treat out of it.

Time for mixing up the egg goo.
I am in the southeast of the USA and although some families may do it differently, the basic recipe of sorts is as below.
Deviled Eggs
Boiled Eggs... however many you want.
Mayonaise... Duke's of course for me
Yellow Mustard
Salt and Pepper to taste
Of course each whole egg makes two finished halves. There are no real measures to apply to the ingredients. I just "eyeball" it.
After boiling and peeling, cut in half and put the cooked yolks in a bowl. Take a fork and mash them up till they are just crumbles.
Add Mayo, mustard, salt and pepper to taste. Mostly Mayo to bind it all together. Less mustard because it is strong. Some like more or less mustard. I like enough to give it a noticeable "tang", without being overwhelming. For the mayo and mustard you can put a little, taste it and if it needs more, you can add and re-mix. You don't need much salt as the mustard somewhat takes care of that... and then pepper to your liking.
Then you fill the empty white halves with the mixed egg filling. Some folks just fill up the hole, but I like them covered.
.... and there you have it ! So Simple.
