Happy start to the week, my dear culinary friends. As always, I bring you a new recipe. I must confess that this one was improvised. I really didn't know how it would turn out, if it would be any good, if it would be edible. I don't know, but as they say, improvisation sometimes yields good results.
As I mentioned in my recent post, inventing in the kitchen has become my favorite refuge. I feel calm when I'm inventing with ingredients. I confess that sometimes I get a little frustrated when I don't have what I need, but even so, I do what I can with what I have.
Well, continuing with the topic of pancakes, yesterday I had some potatoes and some oatmeal left over, and I wondered how this combination would turn out. Now I'll tell you how it turned out.
Well, I had these small potatoes. In the photo, it looks like there are four, but I had cut one in half. I wasn't sure what to do with them, whether to cook them or grate them, so after thinking about it, I opted for the second option.
I took my potatoes and grated them, leaving me with what you see here, a kind of dough. I then squeezed them to remove the liquid using a strainer.
Now, I remembered that I had some rolled oats left over, so I processed them and ended up with half a cup, which I added to the grated potatoes. I started mixing everything together and thought I would leave it at that, but then I thought of adding an egg. I kept mixing, adding a pinch of salt, some flaxseed, and pepper. The result was a batter that was neither too thick nor too runny.
Finally, I place it in the preheated pan with a spoon, let it fry a little on both sides, and it ends up looking like this. 馃憞
I must confess that this is the first time I've made this combination of potatoes and oatmeal, and I really liked it. I think the egg was unnecessary; I don't know why I added it. Next time, I'll try it without adding it to see how it turns out.
Anyway, these mini pancakes turned out really tasty. I made four, and my mom loved them.

Feliz comienzo de semana mis queridos amigos culinarios, como siempre, les traigo una nueva receta, est谩 en particular debo confesar que fue improvisada, la verdad no sab铆a como iba a quedar, si saldr铆a bien, se dejar铆a comer, no s茅, pero como dicen, por all铆, lo improvisado a veces da un buen resultado.
Como mencione, en mi reciente publicaci贸n, esto de inventar en la cocina se ha convertido en mi mejor refugio, me siento tranquila, inventando, con los ingredientes; confieso que a veces me frustro un poco, por no tener lo necesario, aun as铆, hago lo que puedo con lo que tengo.
Pues bien, continuando con el tema de las panquecas, el d铆a de ayer, ten铆a unas papas, y me quedaba algo de harina de avena, me pregunt茅 como saldr铆a esta combinaci贸n, ahora les cuento como resulto.
Pues bien, ten铆a estas papas peque帽as, en la foto parece que son cuatro, pero una la hab铆a picado por la mitad, la verdad no estaba segura de que hacer, si cocinarlas o rallarlas, por lo que despu茅s de pensarlo, opte por la segunda opci贸n.
Tome mis pap谩s y las ralle, me quedo as铆 como ven, como una masa, seguidamente las exprim铆 para sacarle el l铆quido, con un colador.
Ahora bien, record茅 que me quedaba algo de avena en hojuelas, las procese, y me sali贸 media taza, la cual se la a帽ad铆 a las papas ralladas, empec茅 a mezclarlo todo, pensaba dejarlo as铆, sin embargo, se me ocurri贸 tambi茅n agregarle un huevo, segu铆 mezclando, con un toque de sal, algo de linaza, y pimienta, me quedo como una masa no tan espesa ni l铆quida.
Por 煤ltimo, lo llevo al sart茅n previamente calentado, con una cuchara, coloque mi masa, deje que sofriera un poco por ambos lados, quedando de esta forma. 馃憞
Debo confesar que es la primera vez que hago esta combinaci贸n de las papas con la harina de avena, y de verdad me gusto mucho, pienso que el huevo estuvo de m谩s, no s茅 porque se lo eche, la pr贸xima voy a probar sin agreg谩rselo, a ver como queda.
De igual manera, quedaron muy ricas estas mini panquecas, me salieron 4, a mi mam谩 les gusto mucho.
