Recently I've received this delicious present from my humans!!! This colorful, breathtaking and mouthwatering raw vegan cheesecake!!
I was given a half of it and split it with my best friend sheep. I tried to look like a Unicorn on this picture, but it turned out more like a rhinoceros.. I should of place a raspberry a bit higher on my nose.. Oink! 馃惤
The spiritual-Unicorn message from my heart was "Believe in yourself and everything is possible". So grateful and in love with life! Oink! 馃惤馃惤馃惤

I also found a recipe of this heavenly tasty blueberry cheesecake and want to share it!!
RAW VEGAN BLUEBERRY CHEESECAKE
CRUST
- 1 cup of Brazil nuts
- 1/2 cup of Almonds
- 1/2 cup of shredded coconut
- 2 tablespoons of cacao powder
- 2 teaspoons of vanilla extract
- 4 medjool dates
- 2 teaspoon of raw coconut syrup or agave nectar
- pinch of salt
Process well in a blender or food processor until crumbly. Press into a bottom of springform plate or a pie plate.
FILLING
- 4 cups fresh or frozen blueberries
- 2 cup cashews
- 3/4 cup of melted coconut oil
- 4 tablespoons of melted cocoa butter
- 1/2 cup of honey or coconut syrup
- 2 tablespoons lemon juice
- 1/4 tablespoon salt
Process in a powerful blender, pour over the crust and chill or freeze until ready to serve.
Decorate with berries or raw vegan sauce of your choice.. and ENJOY!! 馃惤馃惤馃惤
