Hello, community and all fungi lovers friends greetings. This post is a small contribution to the #fungiFriday community hosted by @ewkaw. Here in Norway, we are in the winter season and the temperature drops to -6 C. There are no more tours or walks to the forest everything is freezing. So here is an easy recipe made with mushrooms bought from a shop.
ingredients:
250 grams champignon mushrooms
1 tomato
1/2 onion
4 garlic cloves
2 green chilies
3 cm fresh ginger
2 tsp red chili powder
2 tsp garam masala
1 tsp salt
2 tbsp butter.
1 bay leaf and 2 cardamoms.
Roughly cut tomato, onion, garlic and ginger.
Put onion tomato, garlic, and ginger in a mixer.
And blend it into a fine paste.
Cut mushrooms in quarters.
In a pan add butter.
Add crushed cardamom and bay leaf.
Add tomato onion paste and then green chili.
Add chili and garam masala.
Stir continuously to avoid burning for around 3-4 minutes.
Add mushrooms stir and add salt.
Squeeze a slice of lemon around 1/2 tsp juice
Add cilantro/coriander.
Add 2 tsp Turkish yogurt.
Stir yogurt well with spiced mushrooms and cook for around 2-3 minutes on low heat.
And the mushroom masala is ready. This is enough for 2 people. Eat with bread, flatbread, or rice.
