This beautiful woman I know recognized something about me not too long ago, about a year ago actually.
She really made me think. What she suggested was that I was terribly out of balance. I wasn't able to fully see it at the time, but today I can confirm she was correct.
I was still functioning, but with the propensity to re-act to things instead of maybe think first and respond. Unfortunately this destroyed our friendship, and it was mostly my fault, but I did take some things with me that I'll forever be grateful for. Call it some type of fate or destiny, but I learned some invaluable lessons from that short lived friendship.
So balance must encompass all aspects of life to sustain consistency and happiness.
Nutrition is vital in this, and I've changed my diet to a very healthy one, ensuring all my vitamins are kept up, and I regularly exercise. (If you wondering why I don't use actifit it's because it doesn't appeal to me, I don't care to prove how fit I am, or be paid to exercise, I'm fit and that's all that matters. )
Changing my diet has drastically improved some mental health issues I've been working on for the past couple of years.
Futuremind doesn't care to cook though, I enjoy it if it's a "project" or I'm preparing a meal for a hot date ;) That's a little different of course lol.
I'm busy working online most of the time and kind of get cranky thinking about cooking, but if I don't do it, then I go hungry, and this throws off productivity, mood, and overall balance.
So I like to cook easy stuff. I wasn't intending to blabber on about balance, but since that sweet woman helped me in this aspect, I thought it to be rather appropriate :)
Futuremind cooked something easy today, so I'll share. An Italian Irishman like myself enjoys lots of potatoes and garlic. Easy peasy.
Sautéed Potatoes and Garlic
Ingredients
- Some potatoes (I usually eat 4 medium size potatoes in one serving.)
- Garlic (I prefer fresh, used 4 cloves for this.)
- Oregano (I sprinkle probably a table spoon.)
- Olive Oil (Coat the pan, too much and you'll need to drain the left over oil.)
- Salt and pepper (Acorrding to personal taste.)
That is all I used for this. Quick and easy solution to eat and get back to work. It's deceivingly delish.
First dice up those potatoes how ever you see fit.
Same goes for the Garlic, unless you're using that powder stuff.
Let's get some oregano.
Let's sprinkle it on now, so that it cooks nicely into our potatoes.
Looking good, now we need some olive oil. Futuremind likes to reuse oil at least 1 time. It's all part of the master plan to save the world I promise, nothing wrong with it.

I used just a tiny bit too much oil in my opinion, but I'm not stressing it. A slotted spoon is a good choice when cooking with oil, and will help strain your food a bit. Olive oil is quite healthy, and I don't stress about ingesting too much of it. Most of the time I use it very lightly anyway.
Ok, cover it up and cook on medium low. Covered will help cook your potatoes more evenly, and faster.
Ensure to check on it every 5-10 minutes, stirring with each check.
This should take a total of about 30 minutes from preperation to completion. I don't cook with a timer, when it looks done, I turn the burner off.
