Singapore is an island with diverse cultural influences that range from Asian to European stems. But there is probably one dish that unites them all ~ the Hainanese Chicken Rice. This dish is basically a poached whole chicken coupled with a flavorful rice that is cooked using the stock & fat of the chicken itself. Sounds great? Let me show you how delicious it is.
Hainanese Chicken rice with Chicken liver & Achar(spicy mixed vegetable & fruits)
There are so many food stalls and restaurants that includes this dish into their menu, some are making it their especiality. I normally prefer the one that specializes it and one of my favorite is the Hawker center along Macpherson rd. I really love the condiments and side dishes that comes with it.

sliced chicken meat dipped in red chili sauce
The chicken meat is really tender & juicy, absolutely delicious! It was cook perfectly. The method of cooking is 30mins of poaching / boiling and another 30mins of resting (cooking by itself), a little more than that will make it dry & tough.
red chili sauce, grated ginger with sesame oil, & pickled green chili
This is a special red chili sauce couple with grated ginger & green chili, oh my... this is the greatest trio when it comes to condiments. The red chili is the one that "packs a punch" while the ginger gives the richness & aroma while the green chili adds to the sweetness & tanginess to the flavor.

Whenever I get to eat this dish, I usually add a chicken liver on it, it adds to the richness of the dish. It was soft boiled which makes it creamy & savory and I really like the irony taste to it. And of course, the chili sauce elevates its flavor.
sliced pineapple bit from Achar
The Achar (Nonya spiced mixed vegetable & fruits) plays a supportive role into this dish, this alone makes me want to eat more of the chicken rice. This side dish may look simple, but if you search for its recipe, you will have to fill your grocery basket with 31 different ingredients. You may check on it in this Achar recipe. This Achar that I'm having has a brine, tangy, & sweet taste and when combined to the chicken meat or liver, it creates a symphony of flavors inside your mouth. Wow!

Once again, I present to you the Hainanese Chicken rice.
Hainanese Chicken rice
That sums up my lunch yesterday and I was absolutely satisfied without burning my pocket. Surprisingly, this meal only cost S$4 (around $6 USD), and it's considered the average price. I can even eat this everyday, but no! Remember to take everything in moderation. I'm not saying this type of food is bad, I'm just saying that the habit of eating this on a regular basis is a bad thing.
So, "ciao" for now. See you on my next food trip!
