A good bread with a nice cup of coffee is great for breakfast or for a snack with friends, but if we add a little cocoa cream to this bread, it's great all the time and for everyone, come on, I don't know anyone who has told me they don't like chocolate. However, in most cases these chocolate or cocoa creams have a high sugar content and in some cases fat.
Some time ago I found a recipe for cocoa cream based on pumpkin, and a couple of days ago I set out to prove that such was left, making a few changes in the amounts of sugar and the process of development, and the truth is that I loved the result. This cream is ideal for spreading toasted bread, stuffing doughnuts or Berliners, and even to decorate cakes.
This is my first time making this recipe, and I wanted to leave some small pieces of pumpkin, which allows it to have a bit of prominence in the cream, because I tell you that if not for that, you will never know that this delicious cream is made from this delicious vegetable. In a pot with enough water to boil the pumpkin, add the stevia leaves and pumpkin, let it boil until it is soft, this will take about 20 minutes minimum, when they are soft, take them out and let them cool.
We remove the crust of the pumpkin and with the help of a mashed step, we proceed to make a mash with the pumpkin, we add half of the cocoa and the sugar, we integrate everything well and we add 1/4 cup of the water of the cooking of the pumpkin.
To finish unifying the cream, take it 5 3 minutes in the microwave at high power (if you do not have one, take it to medium heat about 10 minutes, stirring constantly, would be fine), then add the almond extract, stir well to integrate and let cool before packaging.
If you want to have a smooth cream without small pieces of pumpkin, you can process with the help of a mixer or hand blender, and it will be perfect. The idea of using the stevia leaves in the cooking of the pumpkin is so that it is impregnated with the sweet taste of stevia, thus reducing the amount of sugar required for normal preparation.
