Although I’m placing this recipe under my “Desserts” category, I really think of these Peanut Butter Oatmeal bites as more of a snack. I mean really, if you remove the chocolate chips, they just become a healthy, protein-filled piece of grub. But it is definitely a bonus that they satisfy your sweet tooth at the same time. So, for now, I’m keeping them as a dessert if that’s cool with you guys.
Like I always say, a short ingredient list makes for happy cooking. Although you’re not technically cooking this recipe. Everything about these bites are easy from start to finish. Mix em’, mold em’, freeze em’, and pop em’ in your mouth. Can’t get any simpler than that.
I like to use crunchy peanut butter because it’s obviously the best. 😋 But if you’d like a lighter result, you can substitute for smooth peanut butter instead. I’ve even tried almond butter in the past for this recipe. It was certainly decent and “healthier”, but much more pricey. And let’s face it, nothing beats crunchy peanut butter. 😊 🥜 🍯 🍫
