You might have seen these pancakes floating around on the interwebs, along with jiggly cheesecake and dalgona coffee, everyone and their momma seems to be obsessed with these. What all of them have in common is that they are instafamous, fluffy and originate from Asia.

It's interesting how some dish or beverage can sweep over the social media in a matter of days and weeks and become a huge hit. I think to become a viral food it has to look cute, be fairly simple but a new take on something familiar. Pancakes, cheesecake and coffee are all familiar but with a new twist, they can go viral.

I'm not usually the first one to jump on the trend train, but I do like to keep my eye on what is trending. I've been seeing there fluffy pancakes here and there for a while and because I was bored (read:avoiding other things I should be doing), I decided to try them.

They are simple enough, but you gotta have some patience and fairly good basic baking skills, there are many phases where you can fuck these up. I'm not gonna tell you a recipe because you can just google it, and I didn't even follow one specific recipe, but combined a few from the Youtube videos I watched. The ingredients are the same as in a normal pancakes; eggs, milk, sugar, flour, oil/butter and vanilla. I also grated a little bit of lemon zest into the batter to make these taste a bit more fresh.

These are quite time consuming compared to normal pancakes because you have to whip the egg whites into a merengue separately, and to cook these in a really low heat since they are so thick and need time to cook through. These pancakes are also very delicate so handle with care.

I think I did alright, but would make the batter a bit more thick next time, and try to make the merengue more stable, mine was probably a bit on the softer side. I would also take a bit more time to make sure it cooks through after flipping it since they can easily be a little raw and thus flatten out super fast. But since these pancakes are basically a souffle, they will deflate, no matter what.

Obviously these fluffy pancakes were delicious and cute, but I'd only ever make them if I really wanna impress someone. Normal pancakes are just as delicious and take little to no time to make.
