Ya no sé si me pega la luna, el sol o los eclipses (lol), pero últimamente me dan antojos de preparar platillos que no he hecho antes. Las "primeras veces" en la cocina están a la orden del día en mi vida.
Uno de esos antojos fue preparar un quesillo, el cual es un postre que me lleva a mi infancia, pues mi mamá lo preparaba siempre, siendo el más esperado en los cumpleaños en mi hogar. Pero como dicen por ahí: en casa de herrero, cuchillo de palo, y yo no sabía cómo preparar un quesillo.
En fin, que el antojo pudo más y, después de ver varias recetas, me gustó la receta de engelfoodie (Instagram) y me lancé a la aventura de hacer este quesillo, que les adelanto quedó buenísimo.
¡Y ahora vamos a cocinar!

One of those cravings was to make a quesillo, a dessert that takes me back to my childhood—my mom used to make it all the time, and it was always the most anticipated treat at birthday parties at our house. But as they say, the cobbler’s children have no shoes, and I didn’t know how to make a quesillo.
Anyway, my craving got the best of me, and after looking at several recipes, I liked the one from engelfoodie (Instagram) and jumped into the adventure of making this quesillo—which, I’ll tell you right now, turned out absolutely delicious.
And now let’s get cooking!
Ingredientes (Ingredients)
- 100 g de leche en polvo.
- 5 huevos.
- 13 g vainilla.
- 25 g de licor de café.
- 1 lata de leche condensada de 395g.
- Agua (la misma cantidad de la leche condensada).
- 100 g powdered milk.
- 5 eggs.
- 13 g vanilla.
- 25 g coffee liqueur.
- 1 395-g can of condensed milk.
- Water (the same amount as the condensed milk).
Preparación (How to make it)
- Coloca el azúcar en la quesillera a fuego bajo hasta que se convierta en caramelo; lleva a los bordes de la quesillera hasta cubrir. Reservar.
Haré un inciso en este momento y es referente a la cantidad de azúcar utilizada para el caramelo, que me pareció poca, pero al estar listo y frío el quesillo, se obtiene bastante caramelo líquido; de igual forma, pienso que puede agregarse más azúcar al gusto para hacer un caramelo que cubra un poco más las paredes, si así se desea
Place the sugar in the quesillo mold over low heat until it turns into caramel; spread it to the edges of the pan until it’s completely covered. Set aside.
I’d like to make a quick note here regarding the amount of sugar used: I thought it was a bit too little, but once the quesillo is ready and cooled, you end up with quite a bit of liquid caramel. That said, I think you can add more sugar to taste to make a caramel that coats the sides a little more, if you’d like.

I used coffee liqueur because I don't have any rum in my pantry, which is what people usually add to some recipes.
- Agregar en la licuadora los huevos, leche en polvo, agua, vainilla, licor de café y la leche condensada.
Add the eggs, powdered milk, water, vanilla, coffee liqueur, and condensed milk to the blender.
- Batir para integrar los ingredientes. Añadir la mezcla en la quesillera y tapar.
Whisk to combine the ingredients. Pour the mixture into the cheese maker and cover it.
- Llevar a horno precalentado colocando un envase con agua y dentro de él colocar la quesillera. Hornear por una hora a 180 grados Celsius.
Place the quesillo mold inside a container filled with water and put it in the preheated oven. Bake for one hour at 180 degrees Celsius.
- Dejar enfriar a temperatura ambiente y luego llevar a la nevera por un mínimo de cuatro horas. Yo lo dejé en la nevera por unas ocho horas; mientras más tiempo, mejor.
Let it cool to room temperature, then refrigerate for at least four hours. I left it in the fridge for about eight hours; the longer, the better.
- Una vez reposado solo quedará desmoldar y disfrutar.
Once it has set, all that's left is to remove it from the mold and enjoy.
