Hoy pensaba que estoy como la imagen típica de una persona que tiene un angelito en un hombro y un diablillo en el otro.

El angelito me dice que me alimente bien, que prepare más alimentos probióticos, que me olvide del azúcar y las harinas procesadas, que prefiera las verduras sin almidón ricas en fibra; así sigue aconsejándome este dulce angelito.

Por otra parte, el diablillo me anima a preparar postres y panes, me trae ideas de helados de coco o de pasteles de pollo.

¿A quién escucho? Pues a veces a uno y a veces a otros, aunque creo que el diablillo del azúcar y las harinas procesadas va ganando.

En esta ocasión escuché al angelito de la buena alimentación y preparé un encurtido con baja acidez, porque no me encanta cuando queda muy ácido; es un gusto personal, por lo cual lo preparé con poca cantidad de vinagre.

Today I was thinking that I’m just like the classic image of someone with a little angel on one shoulder and a little devil on the other.

The little angel tells me to eat well, to prepare more probiotic foods, to forget about sugar and processed flours, and to choose non-starchy, fiber-rich vegetables; that’s how this sweet little angel keeps advising me.

On the other hand, the little devil encourages me to make desserts and breads, giving me ideas for coconut ice cream or chicken pies.

Who do I listen to? Well, sometimes one and sometimes the other, although I think the little devil of sugar and processed flours is winning.

This time, I listened to the little angel of healthy eating and made a low-acidity pickle, because I don’t love it when it’s too sour; it’s a personal preference, so I made it with just a little vinegar.

Todo empieza cortando los vegetales seleccionados con un pelapapas. Elegí usar zanahoria y pepino; una combinación que me encanta.

Estas finas tiras van a mantener un toque crujiente excelente, en cuanto al pepino solo uso la parte que no tiene semillas para no sumar liquido a la preparación.

It all starts by cutting the selected vegetables with a vegetable peeler. I chose to use carrots and cucumbers—a combination I love.

These thin strips will retain a wonderful crunch. As for the cucumber, I only use the seedless part so as not to add extra liquid to the dish.

Al tener los vegetales cortados, ocupé un envase de mayonesa (445 gramos) y fui colocando los vegetales dentro, presionando muy bien.

También añadí sal y pimienta, una cucharada de vinagre de manzana y una de aceite de oliva y agua caliente hasta cubrir los vegetales.

Once the vegetables were chopped, I took a mayonnaise container (445 grams) and began placing the vegetables inside, pressing them down firmly.

I also added salt and pepper, a tablespoon of apple cider vinegar, a tablespoon of olive oil, and hot water until the vegetables were covered.

Por tener poco vinagre, este es un encurtido que se debe consumir en un corto período de tiempo y debe mantenerse refrigerado.
