Ingredients

馃崬 4 cups Bread flour
馃 1 cup Whole milk warmed
馃尵 2 teaspoons Active dry yeast
馃崿 1/4 cup Granulated sugar
馃 2 large Eggs
馃 2 teaspoons Pink Himalayan salt
馃 5 tablespoons Unsalted butter softened
馃 Avocado oil spray for greasing
馃 1 large Egg for egg wash
馃挧 1 tablespoon Water for egg wash
馃尶 Sesame seeds
馃 1 tablespoon Unsalted butter melted for topping
馃 Flaky salt


Instructions

1- Activate Yeast:

  • Warm 1 cup of whole milk in the microwave for about 1 minute.
  • Pour into a large mixing bowl and add 2 teaspoons of active dry yeast along with 1/4 cup of sugar.
  • Whisk gently and let it sit for a few minutes until frothy, indicating active yeast.

2- Combine Wet Ingredients:

  • Add 2 large eggs to the yeast mixture.

3- Add Dry Ingredients:

  • Incorporate 4 cups of bread flour and 2 teaspoons of pink Himalayan salt into the bowl.

4- Knead Dough (Initial):

  • Use a stand mixer with a dough hook to mix on low speed forming a shaggy dough.

5- Add Butter & Knead (Final):

  • Gradually add 5 tablespoons of softened unsalted butter in small cubes while the mixer is running.
  • Continue kneading for 8-10 minutes until the dough is smooth and elastic, pulling away from the bowl's sides.

6- First Proof:

  • Lightly grease a clean bowl with avocado oil spray.
  • Shape the dough into a ball and place in the greased bowl.
  • Cover tightly with plastic wrap and a kitchen towel, letting it rise in a warm area until doubled in size (around 1-1.5 hours).

7- Punch Down & Divide:

  • Deflate the dough gently and transfer it onto a clean surface.
  • Divide into 12 equal portions.

8- Shape Rolls:

  • Form each dough portion into a smooth, round ball by pinching the edges underneath and rolling gently between your palms.

9- Arrange for Second Proof:

  • Line a 9x13-inch baking dish with parchment paper.
  • Place the 12 balls evenly in the dish, allowing a small gap between each.

10- Second Proof:
- Cover with a kitchen towel and let rise again in a warm spot until puffy and nearly doubled in size (30-60 minutes).

11- Prepare for Baking:
- Preheat your oven to 375-400掳F (190-200掳C).

12- Egg Wash:
- In a small bowl, whisk together 1 egg and 1 tablespoon of water.
- Brush the tops of the rolls with this mixture.
