White Sauce:
🥬 1 bunch collard greens, chopped
🧅 1 wax turnip, peeled and cubed
🥄 1 tablespoon chicken flavoring
🧂 Salt to taste
🍋 1 teaspoon citric acid

Instructions

1- Prepare the Dough:

  • In a large bowl, combine semolina, cracked wheat, and salt. Add water gradually until a sticky dough forms.
  • Cover with plastic wrap and allow to rest for 10-15 minutes.
  • Knead the dough until smooth, using moistened hands if necessary. Divide into 1-inch balls.

2- Prepare the Filling:

  • In a skillet, brown the ground beef over medium heat.
  • Add chopped onion, chicken seasoning, red pepper flakes, salt, black pepper, and curry powder. Sauté until the onions are soft.
  • Stir in parsley and remove from heat. Allow the mixture to cool completely.

3- Shape and Fill Kotalks:

  • Flatten each dough ball, create a hollow center, and fill with the beef mixture.
  • Seal the top and ensure each dumpling is well-shaped.

4- Prepare Red Sauce:

  • In a pot, heat some oil and sauté minced garlic until fragrant.
  • Stir in tomato paste, chicken seasoning, citric acid, and salt. Add water and bring to a boil.

5- Prepare White Sauce:

  • In another pot, heat oil and add collard greens and wax turnip. Sauté until the turnips are softened.
  • Add chicken seasoning, citric acid, and salt to taste. Add water and bring to a boil.

6- Cook the Kotalks:

  • Add half of the dumplings to the boiling red sauce and the other half to the white sauce.
  • Simmer until dumplings are cooked through and flavors meld, about 15-20 minutes.
