Today while at the store I found a bargain on frozen shrimp: 4 lbs for $15.00. I stir-fried a handful for dinner. I sprinkled in a bit of creole seasoning. They were very good.
I took a minute to look at the nutritional value and was surprised to find good news.
Shrimp can be a unique source of the antioxidant and anti-inflammatory carotenoid nutrient astaxanthin. It is possible for a single 4-ounce serving of shrimp to contain 1-4 milligrams of astaxanthin.
There is lots more information to be found, but in general... shrimp is good and good for you. I will be trying new recipes in the near future. At under $4.00 per pound, I may make another trip to the store to stock my freezer.
