Gajar Ka Halwa is one of the most loved South Asian desserts, especially during the winter season. Gajrela is also one of the recipes close to this one but that has rice pudding in it. It is made with fresh carrots, milk, sugar, and aromatic cardamom, this rich and comforting sweet dish is perfect for family gatherings and special occasions. And garnish it with saffron and dry fruits of your own choice

Ingredients

1 kg red carrots, peeled and grated
1 liter full-fat milk
½ cup sugar (adjust to taste)
4 tbsp ghee
½ tsp cardamom powder
2 tbsp almonds, sliced
2 tbsp pistachios, chopped
1 tbsp raisins
1 pack of cream (optional)


Step 1: Prepare the Carrots

Wash, peel, and grate the carrots. Set them aside.

Step 2: Cook with Milk

Add the grated carrots and milk to a large pot. Cook on medium heat, stirring occasionally until most of the milk evaporates and carrot softens.

Step 3: Add Sugar

Once the milk is reduced, add sugar and mix well. Continue cooking as the mixture thickens. Add little by little to balance the taste also adding khoya add extra sugar to it

Step 4: Add Ghee

Stir in the ghee and cook for another 10–15 minutes until the halwa becomes glossy and starts leaving the sides of the pan. You can also use desi ghee for extra rich taste

Step 5: Flavor and Garnish

Add cardamom powder, raisins, almonds, and pistachios. Mix well and cook for 2–3 minutes. I also used saffrons it add richness to the taste of halwa itself.

Step 6: Serve

Serve warm and garnish with extra nuts for a beautiful finish.

Results

The final dish is rich, fragrant, and perfectly sweet, with the natural flavor of carrots enhanced by creamy milk and crunchy nuts. You can also made khoya from milk powder and garnish over it. It is worth adding ingredient in it.
