Han pasado un par de años desde la última vez que comí chuletas de cerdo ahumadas, mas por descuido y desinterés que otra cosa porque aunque es una comida muy deliciosa, no suele estar en mi radar cuando estoy de compras, la cosa cambio el pasado domingo que estando por el área de carnes frías alcancé a ver una bandeja con 2 chuletas de buen tamaño por tan solo 2,5 dólares lo cual me pareció un buen precio y además como mencioné anteriormente tenia mucho tiempo sin comer eso por lo que tomé una bandeja y la metí al carrito de compras y me fui directo a pagar todos los artículos.
It's been a couple of years since I last ate smoked pork chops, more out of carelessness and disinterest than anything else because although it's a very delicious meal, it's not usually on my radar when I'm shopping, things changed last Sunday When I was in the deli meat area, I managed to see a tray with 2 good-sized chops for only 2.5 dollars, which I thought was a good price, and also, as I mentioned before, I hadn't eaten that for a long time, so I took a tray. and I put it in the shopping cart and went straight to pay for all the items.
Llegando a mi casa empecé a pensar la mejor manera de cocinarlas ya que las anteriores veces que había cocinado chuletas de cerdo ahumadas nunca me terminaba de convencer el resultado final pero después de pesarlo mucho me decidí a irme por el camino “fácil” y hacerlas en el sartén de manera normal pero con la diferencia de preparar una salsa de tomates en sus propios jugos para acompañarlas, parece un poco enredado el plan pero créeme que es bastante fácil y el resultado terminó siendo una delicia que me dejó muy sorprendido, espero que está preparación sea de su agrado, así que sin mas nada que añadir comenzaré a explicar la receta paso por paso.
Arriving at my house I began to think about the best way to cook them since the previous times I had cooked smoked pork chops I was never completely convinced by the final result but after thinking about it a lot I decided to go the "easy" way and make them in the pan in the normal way but with the difference of preparing a tomato sauce in its own juices to accompany them, the plan seems a bit complicated but believe me it is quite easy and the result ended up being a delight that left me very surprised, I hope you are preparation is to your liking, so without further ado I will begin to explain the recipe step by step.
Lo primero que hice fue colocar un sartén a fuego medio, agregue una pequeña cantidad de aceite y la esparcí por toda la superficie, esperé unos minutos para que calentara y agregué la chuleta, hay que bajar la llama a fuego bajo y cocinar con cuidado o se nos puede quemar, cuando notemos que ya que chuleta está sellada la volteamos esperamos a que selle por el otro lado también, después de unos minutos al fuego la misma se habrá cocido completamente creando una costra que es muy deliciosa al paladar además su tamaño se habrá reducido considerablemente, en mi caso estaba cocinando 2 chuletas por lo que tuve que repetir el proceso una por una, una vez las chuletas estaban cocidas, las reservé en un plato para seguir con la receta.
The first thing I did was place a frying pan over medium heat, add a small amount of oil and spread it all over the surface, wait a few minutes for it to heat up and add the chop, you have to lower the flame to low and cook carefully or it can burn us, when we notice that since the chop is sealed we turn it over, we wait for it to seal on the other side as well, after a few minutes on the fire it will have been completely cooked creating a crust that is very delicious on the palate, its size also shrinks. it will have reduced considerably, in my case I was cooking 2 chops so I had to repeat the process one by one, once the chops were cooked, I reserved them on a plate to continue with the recipe.
En este punto el sartén estaba lleno de todos los jugos que las chuletas soltaron durante su cocción y esto obviamente no se puede desperdiciar por lo que hay que usar una técnica de cocina llamada desglasado, técnica la cual consiste en añadir un liquido (generalmente vino o algún caldo) e ir moviendo el sartén para despegar y extraer todos los sabores, en mi caso se me ocurrió la idea de añadir puré de tomates, las chuletas habían soltado además una buena cantidad de aceite, algo te otorga mucho sabor, así que apagué el fuego del sartén para evitar llegar al punto de humo, agregué 5 cucharadas de puré de tomates y empecé a desglasar moviendo con una cuchara hasta que noté que el aceite y los restos de la chuleta se habían mezclado con el puré otorgándole al mismo un color mas oscuro.
At this point the pan was full of all the juices that the chops released during cooking and this obviously cannot be wasted, so you have to use a cooking technique called deglazing, a technique which consists of adding a liquid (usually wine or some broth) and move the pan to loosen and extract all the flavors, in my case the idea of adding tomato puree occurred to me, the chops had also released a good amount of oil, something gives you a lot of flavor, so I turned off the heat of the pan to avoid reaching the point of smoke, I added 5 tablespoons of tomato puree and began to deglaze, moving with a spoon until I noticed that the oil and the remains of the chop had mixed with the puree, giving it a color darker.
Luego añadí 2 cucharadas de Ketchup, esto para otorgarle un toque agridulce a la salsa, seguidamente agregué media cucharada de adobo, encendí la hornilla a fuego bajo y cociné por 5 minutos aproximadamente mientras mezclaba constantemente para evitar que la salsa se pegue y así de sencillo la salsa de tomates con sabor a chuletas estaba lista.
Then I added 2 tablespoons of Ketchup, this to give the sauce a sweet and sour touch, then I added half a tablespoon of marinade, turned the stove on to low heat and cooked for approximately 5 minutes while constantly mixing to prevent the sauce from sticking and it's that simple the chop-flavoured tomato sauce was ready.
Ya para terminar solo le di una pequeña pasada de la salsa a las chuletas, hay que recordar que en ningún momento las condimenté así que la salsa es esencial para darle ese toque extra de sabor, decidí acompañarlas con un poco de arroz, puré de papas y plátanos fritos, la comida quedó exquisita y la disfruté mucho, sin duda alguna la salsa fue la protagonista de esta receta ya que quedó espectacular, tenia ese toque ahumado muy intenso y una textura suave, además, sobró bastante así que la guardaré en un recipiente con tapa para acompañar futuros guisos o pastas, es una salsa muy versátil que combina con todo, espero que esta receta les haya gustado, gracias por pasar, nos vemos en el siguiente post, hasta la próxima.
