Another foodie post to follow. CAULIFLOWER is one of my all- time favorite veggies. Its ratio of benefits: calories is crazy good. This ratio is defined by low calories in conjunction with a high density of phytonutrients, fiber, and vitamins. It is also versatile AF!

Cauliflower is a member of the cruciferous family. Like other members (broccoli and brussel sprouts included), it is full of sulfur compounds that have been correlated with healthy blood vessels and strong bone tissue. (source: everydayhealth.com) Its high fiber content contributes to satiety, as well as GI health. As fiber moves through the digestive tract, it removes food masses that stick to the walls. If left, the toxins in these masses leach through the tract lining and contribute to the development of colon cancer.
And now... for some recipes and ideas. Cauliflower is great because it can both take on bold flavahs and disappear in a recipe. It can be roasted or riced, savory or sweet.
this crust is SO yummy, but note that it will not have the solid structure of standard crust. be prepared to dive in with fork + knife (just like they do in Italy!)

Cauliflower Fried "Rice"
all this requires is breaking up a head of cauliflower and putting it into a high powered food processor --> blend until the chunks are small and rice- like
add all sorts of flavahs --> soy sauce/eggs/green onion/peas, mushrooms/truffle oil/parmasean cheese, pesto/fresh tomatos/mozzarella... possibilities are endless

Cauliflower as Pop/Kettle Corn
the basis of any of these recipes is roasting the cauliflower --> break it into whateva size chunks appeal to you, cover in fat source of choice (any kind of oil, spray, or butter), and season!
sweet ideas --> cinnamon/salt/coconut oil, peanut butter/cinnamon/chocolate chips, maple syrup, coconut shavings, pumpkin pie spice, vanilla
the texture of the cauliflower can feel reminiscent of popcorn, take on endless flavors, and STILL provide you with all the benefits of this yummy veggie
Cauliflower Mashed "Potatoes"
this recipe comes out creamy and delicious! you can use entirely cauliflower orrrr add cauliflower to your potatoes!
just roast or steam your cauliflower chunks and THEN add them into a food processor while still warm --> once they have blended down, put them into a pot over low/medium heat and continue to stir whilst adding the goods
ideas for the goods -->
traditional: cream/milk/butter, salt/pepper/garlic power
cheesy: any mix of cheeses you like, with salt/pepp/paprika/garlic
other fun additions: truffle oil, pesto, bacon or bacon grease, chives, sage, rosemary...

Get it to disappear --> veggies in disguise! once blended in a food processor, adding cauliflower to any of the following will increase the volume and creamy/fluffiness! you won't notice a difference in taste, but will in terms of satiety and gut health ;)
~ oats
~ pasta sauce
~ smoothies
~ rice/grain dishes
~ egg dishes
