Haven't eaten this in a long long time. Wife cooked 'Spring Onion & Ginger Fish'. It's a popular Cantonese stir fried fish dish here in Malaysia which you can get at any Chinese restaurant here.
Wife bought some ready made ginger garlic oil from a local seller recently and used it for today's dish. It has loads of garlic, ginger and spring onions. We used a mixture of 2 types of fishes which were salmon and patin which is a type of catfish.
The texture of the fish was flaky and bouncy. Very fresh and cooked perfectly. The ginger gives it a hearty warmth to the dish and garlic making it fragrant and inviting. The spring onion gives it a freshness balancing out the heat from the ginger. Also topped with some sesame seed and more fresh scallions for garnish.
A very well balanced dish and super delicious tasting one. I ate this with some simple steamed rice.
