This wholesome and nutritious Cabbage, Carrot, and Capsicum Oat Soup is a perfect blend of fresh vegetables and fiber-rich oats. 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
🌟1/2 cup oats
🌟1 cup cabbage, shredded
🌟1 cup carrots, diced
🌟 1 cup capsicum (bell pepper), diced
🌟 1 onion, finely chopped
🌟 2-3 cloves garlic, minced
🌟1 small piece of ginger, minced
🌟4 cup water
🌟1 tablespoon oil
🌟Salt and pepper to taste
🌟Fresh coriander leaves for garnish
🌟A pinch of red chili flakes (optional)
🌟 1/2 teaspoon soy sauce
Preparation:
👨🍳Wash and prepare all the vegetables. Shred the cabbage, dice the carrots and capsicum, and finely chop the onion, garlic, and ginger. And soak the oats in water.
Cooking the Vegetables:
👨🍳Heat oil in a large pot over medium heat.Add the minced garlic and ginger, and sauté for another minute.
👨🍳Add the chopped onions and sauté until they turn translucent.
Adding Vegetables:
👨🍳Stir in the shredded cabbage and cook for another 2-3 minutes.
👨🍳 Add the diced carrots and capsicum to the pot and cook for 4-5 minutes until they start to soften.
Cooking the Oats:
👨🍳 Pour in the water and bring to a boil.
👨🍳 Add the oats to the pot and stir well to combine with the vegetables.Add chili flakes, soy sauce and pepper. Mix well.
Simmering:
👨🍳 Reduce the heat to low and let the soup simmer for about 15-20 minutes, until the oats are cooked and the vegetables are tender.Garnish with fresh coriander leaves.
Serving: 👨🍳 Serve the soup hot. Enjoy it with a slice of whole grain bread or as a light, nutritious meal on its own.
