It's the time of the year again where the baking madness begins... As I've mentioned in my post 2 days ago, baking cookies has become my permanent project every Chinese New Year (CNY).

Today, I kicked start my CNY cookie baking marathon with a batch of Walnut Chocolate Chip Cookies. Unlike Pineapple Tarts and Peanut Cookies, Chocolate Chip Cookies are not synonymous with CNY. I bake them because they are my favourite. They are delicious and their flavour takes me right back to my childhood.

Ingredients

• 1/2 cup Castor Sugar
• 1 cup Brown Sugar
• 1 cup Butter
• 1 cup Oil (I use corn oil)
• 1 Whole Egg
• 1 tbsp Fresh Milk
• 4 cups All Purpose Flour
• Pinch of Salt
• 1 tsp Cream of Tartar
• 1 tsp Baking Soda
• 1/2 cup Walnut (chopped)
• 1 1/2 cup Semi Sweet Chocolate Chips
• 1 tsp Vanilla Essense


Directions

• Preheat oven to 175°c

• Cream together butter, castor sugar and brown sugar until smooth

• Add in oil, egg, milk & vanilla, beat until blended

• Combine flour, baking soda, cream of tartar and salt in a separate bowl; gradually add to butter mixture and beat until blended

• Add in walnut and chocolate chips and beat until well blended

• Drop by tablespoonfuls onto parchment paper-lined baking sheets

• Bake at 175°c for 10 to 15 minutes or unti desired degree of doneness. Remove to wire racks and cool completely
