Saliéndome un poco del guión que acostumbro seguir para mis publicaciones de recetas, en esta oportunidad les contaré como cada vez que la preparo Congris cubano las emociones están a flor de piel en mi casa. Congris, anécdotas de una receta con sabor a familia
One of the favorite foods of all Cubans I know is Congris. I remember when I met my husband 10 years ago, he was working in the hospital in the city where I lived. He is an anesthesia technician and lived in a house with 9 other Cubans who were with the medical mission in Venezuela.
When he invited me to his house it was like entering his country. They had their rules and their way of talking and cooking, all of this trapped me. In a short time I found myself learning to cook their recipes, it was not easy but I learned everything thanks to them. The first meal my husband prepared for me was a Congris and I loved it. After several failed attempts I learned to prepare it and now it is my favorite dish too.
Una de las comidas preferidas de todos los cubanos que conozco es el Congris. Recuerdo cuando conocí a mi esposo hace 10 años, él estaba trabajando en el hospital de la ciudad donde yo vivía. Él es técnico en anestesia y vivía en una casa con 9 cubanos más que estaban con la misión médica en Venezuela.
Cuando me invitaba a su casa era como entrar a su país. Tenían sus reglas y su forma de hablar y cocinar, todo esto me fue atrapando. En poco tiempo me vi aprendiendo a cocinar sus recetas , no fue sencillo pero aprendí de todo gracias a ellos. La primera comida que mi esposo preparó para mi fue un Congris y me encantó. Después de varios intentos fallidos aprendí a prepararlo y ahora es mi plato favorito también.
For this recipe we will need:
250 grams of black beans
4 cups of Type 1 rice
1 tomato
Cilantro leaves
1/2 bell pepper
1 red head onion
1 white onion
3 cloves of garlic
1/2 carrot
1 small potato
Dried oregano
Salt
Soybean oil
Para esta receta necesitaremos:
250 gramos de frijoles negros
4 tazas de arroz Tipo 1
1 Tomate
Hojas de cilantro
1/2 Pimentón
1 Cebolla de cabeza roja
1 Cebolla de cabeza blanca
3 dientes de Ajo
1/2 Zanahoria
1 Papa pequeña
Orégano seco
Sal
Aceite se soya
Preparation:
In a bowl, we are going to wash the black beans. In Venezuela we call them caraotas, they are a source of protein. We put them in the pressure cooker for 40 minutes so that they are soft and then we remove the steam from the pot.
Check that the beans are soft. I bought fresh beans at the market, they are the ones I like to buy.

En un recipiente, vamos a lavar los frijoles negros. En Venezuela les llamamos caraotas, son una fuente de proteinas. Colocamos en la olla de presión durante 40 minutos para que queden blandos y luego retiramos el vapor de la olla.
Revisamos que los frijoles estén blandos. Yo compré frijoles frescos en el mercado, son los que me gusta comprar.
- Cut the potato, carrot, half of the onions and all the vegetables in small squares and sauté them. Add the oregano and let it brown for a few minutes.
- Cortamos la papa, zanahoria, la mitad de las cebollas y todos los vegetales en cuadros pequeños y los vamos a saltear. Incorporamos el orégano y dejamos que se dore unos minutos.
- Wash the rice. We pass it through a strainer and then add it to the pot with the beans.
- Lavamos el arroz. Pasamos por un colador y luego lo incorporamos a la olla con los frijoles.
- In the blender, process the tomato, garlic and the reserved half of the onions, blend and add to the pot with the beans and sautéed vegetables.
- En la licuadora vamos a procesar el tomate, el ajo y la mitad que reservamos de las cebollas, licuamos y vamos a incorporar a la olla con los frijoles y los vegetales salteados.
- Add salt, we stir and give it 18 minutes in the pressure cooker. Once it is ready, serve with tomato, paprika and cucumber.
- Agregamos la sal, revolvemos y le damos 18 minutos en la olla de presión. Una vez que esté listo servimos acompañado de tomate, pimentón y pepino.
Preparing this recipe always fills me with memories, nostalgia for Cuba, family and friends. I can tell you, I have had the opportunity to live in both countries, the ingredients are the same but they do not taste the same. The consistency of the food is different, I guess because of the difference in soil and climate between the island and the mainland, the crops are the same but the flavors are different.
When I served this dish my husband told me that it was good to enjoy a Venezuelan Congris.

Preparar esta recete siempre me llena de recuerdos, de nostalgia por Cuba, la familia y amigos. Les puedo decir, yo que he tenido la oportunidad de vivir en ambos países, los ingredientes son los mismos pero no saben igual. La consistencia de los alimentos es diferente, supongo que por la diferencia de tierra y clima de la isla y de tierra firme, hacen que las cosechas sean iguales pero sus sabores son diferentes.
Cuando serví este plato mi esposo me dijo que era bueno disfrutar de un Congris venezolano.
