My red onion marmalade 👨‍🍳

Nothing beats a good steak sandwich, but it's what sauces or chutneys lie inside us what makes it! This recipe is my smokey onion marmalade and is a very versatile product to have in the fridge.

First I peeled a heap of red onions, obviously you won't be producing this amount at one time. The small scale recipe is below.

I then halved and sliced them as you can see above. Get a nice large pot and place all your sliced onions in with a generous cup of sugar and a splash of veg oil. Now we will break them down for about 15 minutes on a low heat.

After they have broken down and become glassy add cup of paprika and a good pinch of mixed herbs. Cook for a further 10 minutes to combine the paprika.
Now to your mix add the sweet chilli sauce, tobacco, tomato sauce, balsamic and cook for 1 hour on a very low heat stirring occasionally.

Season well with salt.
Your onions are now ready and can be stored in containers in the fridge for over a month. Air tight container for 2 months. Use with your favourite meals, below I have it on my steak sandwich 😋😄

Recipe:

10 red onions peeled and sliced
1 cup of sugar
3 tablespoons sweet chilli
1 teaspoon tobasco
3 tablespoons tomato sauce
2 tablespoons balsamic vinegar
1 cup of smokey paprika
Pinch of mixed herbs
Salt to taste
