The weekend is approaching, and it's always good to have a delicious snack on hand to satisfy our cravings and those of our loved ones.
Today we're going to make a delicious carrot bread. It's not your average bread because it's made with all-natural ingredients, and we haven't used any refined flours or sugars. On the contrary, the ingredients we're using are very natural and healthy, like the raisins, which add sweetness.
This bread is slightly sweet and has a slightly moist texture. It also has a bit of crunch from the walnuts it contains. It's perfect to enjoy with your coffee or your favorite beverage.

Hoy vamos a preparar un rico pan de zanahoria, no es un pan común porque está elaborado con ingredientes muy naturales y no hemos usado ni harinas, ni azúcares refinados, por el contrario, los ingredientes a usar son muy naturales y saludables, como, por ejemplo, las Uvas pasas, que aportan dulzura.
Este Pan es ligeramente dulce, y con textura un poco húmeda, además tiene algo de crocancia por las nueces que este lleva, es ideal para acompañar tu cafecito, o la bebida de tu preferencia.

-90 grams of oat flour (1 cup)
-65 grams of grated carrot, 1 medium carrot
-125 ml of orange juice (1/2 cup)
-40 grams of raisins, soaked in warm water for 30 minutes
-2 tablespoons of chia seeds
-25 grams of chopped walnuts (1/4 cup)
-125 ml of filtered water (1/2 cup)
-1/2 teaspoon of salt
mold: 15 cm in diameter
For decoration: 1 tablespoon of granulated panela (unrefined cane sugar) and walnuts, optional.
-90 gramos de harina de avena (1 taza)
-65 gramos de zanahoria, 1 zanahoria mediana.
-125 ml de jugo de naranja (1/2 taza)
-40 gramos de uvas pasas, previamente remojadas en agua tibia por 30 minutos.
-2 cucharadas de semillas de chía.
-25 gramos de nueces picaditas (1/4 tza)
-125 ml de agua filtrada (1/2 taza)
-½ cucharadita de sal.
-Molde: 15 cm de diámetro.
-Para decorar: 1 cucharada de Panela granulada y nueces, opcional.
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
Prendemos el horno a 180 grados.
Now in a container we are going to pour the orange juice and the two tablespoons of chia seeds, let it sit for about 10 minutes.
After 10 minutes we proceed to add the grated carrot, mix and add the oat flour.
We mix again and add the water, whisking until the ingredients are well combined.
Now we add the salt, raisins, and chopped walnuts.
We mix and add the baking powder, we beat again, making sure the ingredients are well combined, the mixture is ready.
Pour the mixture into a greased and floured mold. If you like, you can decorate it with a little granulated panela on top and walnuts. This step is optional, but the bread looks more attractive and delicious 😍
Then we put it in the oven for approximately 40 minutes; when you put in the pastry stick it should come out slightly damp.
After 40 minutes I took it out of the oven and my bread was ready, now I just have to let it cool down completely.
Then we unmold it and cut a piece to enjoy its flavor! 😋 This bread is beautiful, rustic, moist, crunchy from the walnuts, and slightly sweet from the raisins—definitely a fantastic recipe! 👌
