Just incase anyone was interested in how my 'booch brew is doing!

The orange flavour ferment went quite well. After 4 days sitting with the oranges in it, I transferred it to bottles, straining out the orange bits, yeast bits, and partial SCOBY (often the booch grows a little more SCOBY even after the mother has been removed). Then I let it sit on the warm counter for another 3-4 days to get bubbly. During the carb ferment, we do put a tight lid on top, but you have to be careful. It is possible for the booch to get too bubbly and too much pressure builds inside the bottle. If this happens the bottle can burst, which is messy and dangerous. To avoid this, we 'burp' the bottles by briefly opening the lid every couple of days. This also lets us gauge when we've let it sit long enough. Eventually it will go "tssshht" like a bottle of pop when you open it. So, this batch carbonated nicely, which I think is partly due to the citrus. I find that more acidic fruits tend to create a more bubbly booch. You should have seen the time I tried using habanero pepper to spice up a brew. BOOCH EVERYWHERE.

BUT HOW DID IT TASTE?!

Not bad! It's certainly not my greatest booch achievement ever, but def not a failure. I found this brew to still be a bit too sweet and not dry enough. I think I messed that up when I didn't let the first ferment sit long enough. Each batch is a learning experience!

MEANWHILE...

We mustn't forget that I do have a fresh batch of first ferment going. I started it on Saturday, Jan 27! So, today is 10ish days. Most people say give it 7-10 days. Go too far beyond that you're going to start to have Kombucha Vinegar, which has it's own miraculous uses, but it's not our target right now. I gave it a bit of a taste test and it still tasted a bit on the sweet side so I'm going to give it another day.

How do you think I should flavour this next batch? The sky is the limit! I think I would like to do a ginger lemon portion for sure. What else? I can do two different flavours!
