I am here to with a lovely step by step guide on how to prepare the Authentic West African Bean Cakes which is also referred to as Akara.

If you grew up in Nigeria or have ever sampled West African street food, you already know that nothing beats the smell of fresh Akara frying in the morning. These golden, crispy bean fritters are light, airy on the inside, crunchy on the outside, and packed with flavor. Pair them with hot pap (akamu), custard, or freshly baked bread, and you have the ultimate weekend breakfast.

Today, I will be walking you through my step by step process for making perfect, restaurant quality Akara using simple, fresh ingredients.

Here are the list of ingredients

Black-eyed peas or Brown beans (peeled)
Fresh Red Scotch Bonnet Peppers (Ata Rodo)
Red Onion
Salt
Vegetable oil
Water

The first step is Soaking the Beans
Start by soaking your peeled beans in a bowl of clean water for about 5 to 10 minutes to soften them slightly before blending.

Second step is Gathering the Base Ingredients
Set out your soaked beans alongside your fresh ingredients: red onions, scotch bonnet peppers, and salt.

Tip: Keeping the water content low during blending is the secret to getting thick, light Akara that does not soak up oil!.

Third step include blending to a Smooth Paste
Transfer the beans, onions, and peppers into a high-speed blender or food processor. Add a very tiny splash of water just enough to help the blender blades move. Blend until you achieve a thick, smooth, and lump-free batter.

Step four is Incorporating Air into the Batter
Pour the blended mixture into a mixing bowl. Using a wooden spatula or whisk, vigorously stir the batter in one direction for about 3 to 5 minutes. Incorporating air into the mixture creates a light, fluffy texture inside the fried fritters. Season with salt just right before frying (salting too early can deflate the batter).

Step five Frying the First Side
Heat vegetable oil in a deep frying pan over medium-high heat. The oil must be hot enough so the batter floats immediately without sinking to the bottom. Carefully scoop tablespoonfuls of the thick batter into the hot oil. You will see them instantly puff up and start to turn a light golden color.

Step six turning for an Even Golden Crunch
Once the bottoms are set, flip each bean cake over using a slotted spoon. Fry until all sides turn a uniform, rich golden-brown color and the exterior feels crispy.

The final step is Serve
Scoop the fried Akara out of the oil and drain them on a paper towel-lined plate or rack. Serve hot with your favorite side whether it's warm pap, soft bread, or a side of pepper sauce.
