Breakfast Salad!

This morning I had a breakfast salad, all with ORGANIC ingredients that PACKED this breakfast with tons of HEALTH BENEFITS...and it was delicious to boot!!

Ingredients and Benefits!

  • Eggs- I did a combo of egg white scramble and regular egg scramble (to try and lower some of the cholesterol I am getting from the eggs). Benefits: Protein! Protein is an important building block of bones, muscles, cartilage, skin, & blood. Your body uses protein to build & repair tissues and we also use protein to make enzymes, hormones, and other body chemicals.

  • Peppers- I had roasted red bell peppers and sautéed green peppers. Benefits: Bell peppers are rich in many vitamins and antioxidants, especially vitamin C & carotenoids. Eating them has several health benefits, like improved eye health, skin health and reduced risk of many chronic diseases.

  • Israeli CousCous- I added 1 tbs of this, I didn't want too much of the carbohydrate but this type of CousCous has 60+ % of your daily selenium. Benefits: The biggest benefit of selenium is to prevent damage to red blood cells. The mineral is also involved in our hormone metabolism, immune function and can protect against some types of cancer.

  • Mushrooms- I added tiny baby bella mushrooms that had been cooked in olive oil. Benefits: Mushrooms are super dense w/ nutrients, like copper, potassium, protein & selenium, which we learned above is good for us! They're also a good source of phosphorus, pantothenic acid, zinc, and niacin.
    Bonus: Olive oil is one of the "healthy fats," full of antioxidants that can help fight serious diseases and contains vitamins E and K.

  • Arugula- I had fresh arugula for some greens and the health benefits are out of this world.
    Benefits: Arugula is packed with vitamins, minerals, & antioxidants. It contains high levels of folic acid, vitamin C, vitamin K, and vitamin A, which makes it great in fighting against free radicals. It has lots of minerals like potassium, manganese, iron, and calcium and phytochemicals, which we now know are beneficial in preventing cancer! WOW

  • Cheddar- Let's be real, I added a sprinkle of cheddar cheese simply because I love cheese! Benefits: I guess I could call out that it contains some calcium, which is good for our teeth and bones, and low-fat cheddar is healthier alternative than full-fat cheeses.

  • Roasted Potatoes- I only added a few slices of potatoes, to try and keep my glycemic index from spiking and giving me big cravings later in the day, but I was surprised to learn that potatoes too have several health benefits! Benefits: Potatoes on their own contain no fat, sodium or cholesterol but does contain nearly half your daily value of vitamin C. 1 potato has more potassium than a banana, which is good for your blood pressure, cardiovascular health, bone strength, and muscle strength. They are also a good source of vitamin B6 (great for brain function) AND has fiber, magnesium and antioxidants!

  • Onions- There were some cooked onions in my salad too, I actually love adding onions to lots of dishes. Benefits: Phytochemicals in onions can reduce your risk of developing gastric ulcers, the chromium in onions assists in regulating blood sugar and it contains some sulfur, which helps lower blood sugar by triggering increased insulin production (this also helps reduce cravings later!).

I added salt and pepper to taste :)
