BraaiBoy TV: Pepper Bacon Cheese Wheel - aka "Yummy on a stick"

Many, if not most, of the recipes I do on BraaiBoy TV are untested before we film them. However, just by thinking of the ingredients and the way they come together I can usually tell it's going to be quite lekker. So far everything has been "good", and maybe (like in the case with the stuffed potato recipe) I will revisit a recipe after it's been released to try something to "make it even better".

However, every now and then something so delicious happens, that it's a "Top 10 favourite" candidate as is!

This was the case with last week's - Biltong & Cheese Deep Fried Onions, and guess what... lightning does indeed strike twice, because this week's "Yummy on a stick" (do you perhaps have a more creative name for it?) is another!

The Pepper-Bacon-Cheese Wheel starts off by charring some peppers directly in the coals.

You'll want to pre-grill some bacon as well (the wheels spend very little time on the grill once constructed... literally just long enough for the cheese to start going gooey, so you want your bacon to be edible already) Be careful not to make it too crispy though or else you'll have a tough time rolling it later.

Once you have sweated the charred peppers, peel off the skin, slice into strips and lay it on top of a piece of streaky bacon. Slice some Mozarella into strips and layer that next and then top with some torn pieces of basil if you have any of that handy.

Roll it up, pierce it with a sosatie (kebab) stick and off it goes to the grill.

P.S. They go quick... so keep a close eye... you don't want all your cheese dripping into the coals.
