Healthy and nutritious energy bars are full of nuts, dried fruits and oats. It sticks together because of tahini paste, mashed sweet potatoes and bananas. As many ingredients were already sweet, I didn't add any sweetener, but maple or almond syrup would be great inside. Of course I had to cover it with chocolate, but it's also tasty without it.
These bars are full of nutritions like proteins and sugars and because of that are great to pack up for traveling, or for lunch at the job.
Ingredients:
- 130 g of sweet potates-
- 150 g of sesame seeds
- 2 tablespoons of extra virgin olive oil
- 150 g of nuts; cashews, peanuts, almonds
- 2 teaspoons of chia seeds
- 2 teaspoons of flax seeds
- 50 g of black and white raisins
- 30 g of dried cranberries
- 1 dl of water
- 350 g of rolled oats
- 2 ripe bananas
- 150 g of vegan chocolate
Preparation:
- Peel and cut sweet potates. place them in a small pot with a bit of water and boil it for 10 minutes.
- Place nuts, seeds, raisins and cranberries in a bowl.
Boil water and pour it over the nuts and dried fruit. Let it soak for 10 minutes. Drain it well and place it back in the bowl.
- Add rolled oats, chia and flax seeds and mix it well.
- In a hot pan, roast the sesame seeds for a few minutes on medium-low heat.
Blend them with 2 tablespoons of olive oil, into a tahini paste. - Mash two bananas with cooked sweet potates and mix it with the tahini paste.
Add the mixture to the bowl and mix it well with the oats, dried fruits, nuts and the rest of the seeds. The mixture should be slightly damp and sticky.
I didn't add any sweetener as the bananas and dried fruits are already sweet enough. If you like it sweeter you can add any kind of syrup. - Place baking paper on the baking tray and put the mixture on it. Slightly press it down with a spoon.
- Place it in the oven at 120°C for 2,5-3 hours. The bars should be dry, but still cewy on the inside. They are done, when the sides starts get to slightly brown.
- Melt the chocolate in a double boiler.
Pour it over granola, spread it with spatula and let it cool down.
- Cut the bars before it cools down completely.
