I've had a love affair with Spain since spending a month at a Spanish school ten years ago.

Spanish food is delicious and often very quick and easy to make. In fact, it doesn't get easier than Spanish Tortilla (Tortilla de Patatas).

Ingredients

You need just five ingredients. That's it! These are also ingredients you're very likely to have lying around.

  • 500g potatoes
  • 1 onion
  • 4 eggs
  • Olive oil
  • Salt

Important: You need frying pan that has a non-stick surface. If you don't, there's a good chance the tortilla will stick to the pan during cooking, and when you flip it, it will break apart.

Instructions

1. Peel the potatoes and slice them very thin.

2. Fry the potatoes in some olive oil on a medium heat until cooked through.

Once cooked, take them out of the pan and put them into a medium to large bowl.

3. Slice the onion into strips

4. Fry the onion in some olive oil until cooked.

Once cooked, take it out of the pan and add to the bowl with the potatoes.

5. Beat the eggs and add to the bowl

Beat the eggs well and add to the bowl with the potatoes and onion.

Mix well so that the onion and potato aren't in clumps.

6. Cook the tortilla mixture

Add some olive oil to the pan on a medium heat. Once the oil has warmed up, add the tortilla mixture, spreading it out to keep it even.

When the layer on top is less moist, between 5-10 minute later, flip the tortilla.

Warning: do not throw it into the air. This will not work.

To flip the tortilla, put a plate on top of the pan and turn it over, then slide the tortilla back into the pan.

Cook the other side for about 5 minutes, and your Tortilla is ready. Flip the tortilla out onto a clean plate and add salt to taste.
