Since starting my health journey, my taste for certain things have changed. Don't get me wrong, I still love to bake for people, I just won't eat it. It really isn't "oh I shouldn't have that" it's "I don't want that". Does that make sense? My kids, not so much. They know Mommy doesn't like certain things, they just don't understand why so well. I've been on the search for some alternatives, that way we can enjoy a few things together (and maybe sneak in a few healthy things without them knowing 😉). Which in some ways is hard because I've learned dairy totally kills my stomach, and I really don't like anything with (white) sugar, it is just too sweet for me. That's some of their favorites! Since I didn't have knowledge of how to throw together any recipes myself, I've been looking online. Pudding has been a favorite of theirs lately. I searched for a vegan avocado pudding sweetened with dates recipe. I was pleasantly surprised to have found one that looked fairly easy to make. I finally got all the ingredients I needed, and I was ready to whip that bad boy up.
Forgive my "baby" blender, it's the only thing I have, but hey, I made it work! I definitely need to up my kitchen tools, ha
I usually let the kids help, they LOVE to help, but if they see anything that looks suspicious to them going into something, they will refuse it, so I had to be sneaky!
It's all in there, let's see how this goes.....
Ahh, I did it! I made pudding!!
Now to find out if the kids approve... Crosses fingers
Alex took a bite, Roman surprisingly ate almost all of his! And I love it! Two out of three ain't bad! Haha
This is a very big deal, he refuses to eat just about everything
I will definitely be trying this again! It was so easy and wasn't overly sweet. Here's the link where the full recipe can be found:
