Christmas Eve and Christmas Day have been good to me! I hope you feel the same! All week I went through my belongings and donated food, clothes and other things to various shelters that I knew others would have a better use for.This always feels better than receiving. By donating items to groups that help the community we impact others lives in ways we have no clue. It's a beautiful thing!
We had a simple dinner of roasted chicken, pepper jack macaroni and cheese, honey and butter cornbread and garlicky mashed potatoes.
The chicken looked good even before roasting it!
And it looked better still when plated!
I made the simplest salad that was such a hit. Arugula, spinach and drained marinated artichokes drizzled with extra virgin olive oil, balsamic vinegar, cracked pepper and coarse salt and feta. Super easy and delicious!
We also made tamales which I prefer to deep fry once they are done. I prefer the flavor of fried tamales than that of freshly steamed.
My favorite gift was one of the simplest, my all time favorite book, "Valley of the Dolls!"
