Well, as part of my daily routine at home as a cook, I was able to serve a healthy dish again to my beloved husband and daughter @tegoshei. I always love to share it with you here too in Hive.
What I cooked for our lunch yesterday was "Vegetable Okoy or Vegetable Fritters with a slightly spicy dipping sauce. So, join me now as I show you how I did it, but please bear with me because I can only cook simple and just a normal homemade viand or dish which my family and I share for our daily meal. So, let's go...
Wash and clean squash, carrot, cabbage, moringa leaves, bell pepper, onion, spring onion, tiny hot chili and lemon.
Peel and slice squash and carrot into thin strips. Cut thinly the cabbage, onion and bell pepper. Then mix all the sliced vegetables and spices in a big clean bowl and then set aside.
For the Batter:
Crack and beat 2 medium-sized eggs in a clean bowl. Add water and gradually add the flour and the cornstarch. (I don't have an exact measurement of these ingredients I only see to it that the texture of the batter mixture is good or fine.) Then, add some seasonings like ground black pepper, garlic powder and ginisa mix. After making the batter, pour it slowly and mix with the vegetables and then set aside.
For the Dipping Sauce:
Cut onions, spring onions and tiny hot chili into small pieces. On a clean small bowl, put some white vinegar, a little bit of soy sauce, and white sugar then put the onions, spring onions and tiny hot chili. Mix them altogether and then squeeze some lemon. Then set aside.
Heat up some canola oil in a pan.
From the mixture of vegetables in a big bowl, I just scooped enough amount and transfered it to a small plate then slowly and carefully put the vegetable mixture into the heated cooking oil in the pan.
Just cook it in low heat. When it's already cook and crunchy, take it out carefully from the pan and transfer it to plate with a kitchen towel or tissue to absorb the oil.
Repeat the cooking or frying process until all the mixed vegetables are finished.
So, here's our crunchy, delicious and nutritious vegetable fritters.
Serve it with a slightly spicy dipping sauce. This kind of dish can be served both for snacks or dinner. So, let's dig it in...
