Sweet potatoes are one of the most popular types of tubers in the area where I live. But here it is not so popular for side dishes that taste savory. Usually, people in my area make Sweet Potatoes for cake ingredients as well as drinks.
In the past, I have also made Sweet Potatoes Noodles but from Orange Sweet Potatoes. But this time I will explore Purple Sweet Potatoes.
I'm going to make pasta from Purple Sweet Potatoes. The unique thing in my recipe is that I don't use a flour mixture. I only use the Purple Sweet Potatoes themselves to make pasta. So this dish is quite affordable.
Purple Sweet Potatoes Pasta reminds me of my childhood. My family didn't have much food supply at that time. So we rely on tubers that we can grow ourselves in the garden, including Purple Sweet Potatoes. We make sweet potatoes as side dishes.
Luckily, sweet potatoes are included in the superfood that has good nutritional content for the body and we don't need to doubt it anymore.

Here I used bay leaves to create the fragrant aroma of the dish. You can also use basil or other leaves that produce a fragrant aroma to bind the delicacy to the food.
Peel the Purple Sweet Potato clean, then peel it clean. Cut into not too thin slices.
Using a peeler, start slicing the sweet potato. Here I used a potato peeler to get thinner slices and keep them long so they resemble noodles even though they are not very similar. I wish I had a vegetable cutting tool that could shape the vegetables into spiral-shaped noodles. I'll buy that tool some other day of course.
This is the result of my sweet potato slices, manually using a peeler. If you have a noodle maker, it's better so you can shape the noodles out of vegetables into longer ones.
Slice the onion, garlic, and chilies. Then heat the oil and start frying them until fragrant. Also add bay leaves, pepper, and salt to taste.
After the seasoning becomes fragrant, add the sweet potatoes. Mix well, add a little water so it doesn't burn. Cook until done.
Correct the taste, then remove the pasta, and serve while warm.
You can serve Purple Sweet Potato Pasta with other side dishes, also with tofu, or tempeh, or with fish and chicken.
