So this time I will share the quick bites menu idea by serving it with baking to minimize the use of oil and save cooking time.
Here I choose the method of cooking with an oven because it is healthier and we can do other things while leaving our food in the oven with the monitoring of the time we have set.
Baked Pumpkin Stuffed with Stir fried veggies can be used as a snack menu, breakfast, brunch, or even a delicious dinner. Here I put this food in the type of quick bite because it is easy to be served and enjoyed with a quick bite.
Ingredients
We only need a pumpkin, your favorite vegetables, and seasonings in general such as pepper and salt.
For vegetables, here I choose to use vegetables that are common in Indonesia, namely mustard greens.
For other vegetable recommendations, I recommend spinach, sprouts, or types of lettuce and lettuce with a crispy texture.
How to make
Cut the pumpkin into chunks that leave curved space in the pumpkin so that it can later be filled with vegetables.
Before baking, spread the pumpkin slices with oil and seasoning. Here I use coconut oil to the bake pumpkin.
I set a time of 40 minutes with a temperature of 250 degrees Celsius. This depends on the condition of each oven. And in the middle of the baking time, make sure you change the position of the pumpkin so that the pumpkin cooks evenly and there are no more burned parts than the rest of the pumpkin.
Prepare the Stir fried Vegetables
While waiting for the pumpkin to cook, we prepare sauteed vegetables to fill the baked pumpkin later.
I stir fry my favorite vegetables with onions and chili. For me, red onion, garlic, and chili are basic ingredients that must always be present in stir-fried dishes.
Here I make sure that the texture of the vegetables is still crispy and not soft.
To get the texture of vegetables that look fresh and still feel crispy, be sure to do the pieces of the glaze are not too small so that vegetables do not easily overcook when cooked.
Plating
Remove the baked pumpkin from the oven, then serve with stir fried vegetables.
