A tradition that is repeated every year in my life, initially by my grandmother (probably for her was the same with her grandmother), then for my mother and now for my sister and for me, is to prepare some donuts of yucca, celery and cheese, I will share how they do:
We will need:
- 2.5 kg of semi-hard cheese (or as we say here: llanero cheese)
- 1.5 Kg of Celery
- 1.5 Kg of Yuca
- 1Kg Mozarella cheese
- Wheat flour to taste
- 2 Eggs
- 4 Cups of Sugar
- Vanilla to taste

Once the cheese is ready, join the other ingredients (all) and knead until it is a homogeneous mixture and make small balls (it is tested according to the texture and the body of the dough adding little by little flour until you can mold the balls):

A mixture of burnt sugar and herbs is usually prepared, or honey is added if it is served as a dessert ... This year, as my father has been suffering from diabetes, we did not make the honey, therefore they remained that way ...
