Quadruple the Delight with One Lemon: Limoncello, Syrup, Jam and Compost / レモン1つを4倍楽しむ: リモンッチェッロ、シロップ、ジャム、コンポスト
It was really hot last weekend, and I had a craving for Limoncello. I had vodka at home, so I decided to make it by myself.
Limoncello uses only the peel of the lemon. I used the inner part of the lemon to make lemon syrup for my family. I was wondering what to do with the white part between the peel and the pulp, which gives a bitter taste, but then I remembered, I often add lemon to the compost.
I was happy to be able to use all parts of lemons, so I decided to post about making Limoncello, lemon syrup (+ jam) and compost 😊
Preparing Limoncello
It's my first time and I'm still in the making process. The recipe seems simple - leave the lemon peel in a strong alcohol such as vodka for a week, then combine it with a syrup made from sugar and water, and it's ready in another week. I really like this kind of lazy cooking, most of the things are done by time and nature.
For Limoncello, the peel of the lemon is used, so make sure to use an organic one. I bought a pack of four organic lemons, peeled them, put the peel in a container disinfected with boiling water, and soaked them in 350ml of vodka. It may sound like a small amount, but after a week when I combine it with the syrup, it becomes at least 500ml, which seems like enough for me for a summer.
Preparing Lemon Syrup
Since seeing a video on Instagram by Chef Sam Black this spring about making rhubarb syrup, I've been making various of syrups, starting with rhubarb, lemon ginger, Elderflower, and so on.
The recipe is very simple - just combine the fruit with 1.1 times its weight in sugar and let it sit for a few days. That's it! Another lazy recipe 😉
I read somewhere that the white part between the lemon peel and pulp can give a bitter taste, so I removed it. Normally I slice whole the lemon, so I think it would be okay to leave it in.
Combine lemon slices and sugar, and move them to a disinfected container.
After a few days, strain it, and if there's any sugar left, dissolve it by cooking it. Don't throw away the pulp. You can turn it into jam by cooking it. The picture below is rhubarb, but you do the same for the lemon pulp. You can put it on yogurt or bread, or mix it into pound cake and bake it.
Composting the rest
My garden is a tiny two-square-meter balcony, but I have a compost bin. I rotate two grow bags, mostly adding tea and coffee, sometimes eggshells, and some good vegetable scraps. I often add lemon peel because I read somewhere that it repels insects.
Just cut into small pieces with a knife, put it in the compost bin, and cover with soil. From there, the microorganisms in the soil do a good job, and in summer it returns to the soil in a few weeks. Lazy is the best here too!
With the composting method, I've never had a big insect outbreak so far. But just in case, I keep the compost bin closed. By the way, when I started this balcony garden last year, I bought a few bags of soil, but since then I've never bought soil.
Conclusion
How about it? With just one lemon, you can enjoy a wealth of delights: Limoncello, lemon syrup, lemon jam, and even compost. It's great that it produces almost no waste.
If you're thinking "I don't drink alcohol," or "I don't have a compost bin," why not simply slice lemons and soak it with sugar? You'll end up with delicious syrup and jam!

先週末は暑かったので、無性にリモンチェッロを飲みたくなりました。家にウォッカがあったので自分で作ることにしました。リモンチェッロに使うのはレモンの皮だけです。
レモンの実の部分は家族用のレモンシロップに使うことにしました。皮と実の間の白い部分は苦味が出てしまうのでどうしたものかと思いましたが、そうそう、レモンはよくコンポストに足すのでした。
レモンを余すところなく使えてうれしかったので、リモンチェッロ、レモンシロップの作り方を交えて投稿することにしました 😊
リモンチェッロを作ろう
・・・・・といっても今回が初めてで、まだ作りかけです。作り方は簡単で、ウォッカなどのアルコール度数の強いお酒にレモンの皮を浸して一週間、砂糖を水に溶かしたシロップと合わせて一週間で出来上がるようです。ずぼら万歳!
リモンチェッロにはレモンの皮を使うので、皮も食べられるものを用意しましょう。私は4個入りのネットを買って、皮をむいて、熱湯消毒した容器に入れて、350mlのウォッカにつけました。350mlというと少なく聞こえますが、一週間後にシロップと合わせて500mlにはなるので、一夏分としては十分そうです。
レモンシロップを作ろう
春にChef Sam Blackさんのインスタグラムでルバーブのシロップを作る動画を見て以来、ルバーブに始まり、レモンジンジャー、ニワトコなどなどあれこれシロップを作っています。
作り方はとても簡単で、果物の重量の1.1倍の砂糖と果物を一緒に数日つけておくだけです。レモンの皮と実の間の白いところは苦味が出ると何かで読んだので、外しました。普段は皮ごとスライスするので、入れても大丈夫な気もします(いい加減w)
レモンの重量の1.1倍の砂糖を加えます。これを熱湯消毒した容器に移します。
数日したら濾して、砂糖が残っていたら煮て溶かし、実の部分は火を通して煮詰めてジャムにできます。下の写真はルバーブですが、こんな感じでジャムになります。ヨーグルトやパンにのせたり、パウンドケーキに混ぜて焼いても。
コンポスト
私の庭は2平方メートルもないマイクロバルコニーですが、コンポストがあります。2つのグローバッグをローテーションして、主にお茶とコーヒー、時々卵の殻や、よさそうな野菜くずを入れています。レモンは虫除けになるってどこかで読んだのかな、以来レモンの皮をよく入れてます。
小さめに包丁で切ったものをコンポストに入れて土を被せるのみ。あとは土の中の微生物がいい仕事をしてくれて、夏場だと数週間で土に帰ります。ここでもずぼらばんざいです。
虫が大発生して涙目・・・みたいなことはこれまでに一度もないのですが、念のためコンポストの口は閉じています。余談ですが、去年このバルコニーを始めたときには数袋土を買ったものの、その後はすべてコンポストでまかなえています。
おわりに
どうでしょう。レモンひとつでリモンチェッロ、レモンシロップ、ジャム、コンポストといっぱい楽しめます。ごみがほとんど出ないのもよいところ。
「お酒飲まないよ」「コンポストないよ」という人は、単にレモンをスライスして砂糖と一緒につけてみてください。おいしいシロップとジャムができますよ!
